A Plethora of Apples – Yummy Apple Recipes for Your Fall Harvest

Each Fall we end up with an abundance of fresh apples. Whether it be from our own tree or given to us by the grandparents we usually have large buckets of them. As a result over the years I have created and tested many different apple recipes to make use of all these delicious apples. Of course we make the traditional apple crumble and pie, but as yummy as that is, we do like a little variety. And I do like to experiment.

The kids love just coming home and grabbing a fresh apple from the bucket to enjoy. In fact they eat so many apples that you would think that we might actually make a dent in them. Unfortunately this is not the case – so baking it is! (and other creative uses)

I found and/ or developed a number of dairy free, sugar free and even some gluten free recipes that use apples. Giving us lots to choose from and enjoying whatever suits us on any particular day. I am still on the hunt though for a recipe that uses a large quantity of apples at once, as many of these recipes use maybe 4 apples at once. That’s a super long process of getting through our bucket! Even when I double the recipe.

  • Apples & Peanut Butter (simply slice your apple and dip in peanut butter)
  • Apples & Caramel Dip (don’t be deceived this is a sugar free healthy dip)

I have yet to try an apple cookie – but it’s on the list! and when I am getting towards the bottom of the bucket I usually start to make apple juice with our juicer, or even apple sauce (just boil the apples til soft, drain and puree in blender, add a little cinnamon and voila!).

It’s that time of year again, back to school, back to routines and also time to try new things.   We had a fantastic summer full of camping trips, days at the lake and all kinds of other adventures. You may have noticed I was suspiciously absent during the month of August. This is because I packed up the kids and went to Australia for 3 and a half weeks! My sister is there for a year with her family as her husband is on a teacher exchange.

I couldn’t resist the opportunity, as Australia is a place I absolutely love! And even though I have been before there is so much to see and do, it was time to go again. Plus this time we included a week in New Zealand, which I had not been to before.

As a result I have tons of things to share with you and lots of blog posts to write about where to go and what to see in that area of the world. So this Fall I will include a weekly feature about some fabulous place in Australia or New Zealand. Giving you the scoop on how it works for families and children and what recommendations we have.

Also this Fall I will continue with sharing fabulous recipes that I have found and tried, that are sugar and dairy free, and sometimes gluten free. There seems to be an endless stream of yummy recipes out there! and I have a big bag (literally) full of them to try. For instance this morning I made Apple Cinnamon muffins again, which I tried last year and we really enjoyed. This year I tried something a little different, using leftover almond mash from making almond milk. They were so moist and yummy… Of course I promptly shared them with my neighbor and friends this morning over coffee as we sat outside amongst the beautiful fall leaves.

These are the posts I will guarantee in amongst all the joys, trials and insights of having 3 children, whether it be tips on how to get them out the door in the morning or programs and crafts that I would recommend. And sometimes whatever moves me, whether it be a good book I’ve enjoyed or a moment I need to share. This is the joy of blogging!

Right now I am up to my ears in apples, like last year, we have reaped an abundant crop from our tree and are enjoying apple everything. I have made more crumbles than I can count, as well as pie, muffins, smoothies (ever tried an apple pie smoothie? Yum!), juice, etc. Though I have recently discovered apple butter – OMG! delicious and might try making that.

Fall is also my most favorite time of year! and I get super excited and motivated at this time of the year. Seasonally it is a time of ending, getting ready for a period of ‘rest’, but I see it as a time of new beginnings with all kinds of things that I want to try, or the kids want to try. Plus I love the warm golden sunny days, and the crisp Fall evenings. Gorgeous.

An Abundance of Apples! & Sugar Free Apple Crumble

Tis the season of apples! Fresh juicy apples right from the tree or at the local farmers market. They are sweet and delicious and in abundance at this time of year.

Apples have long been a symbol of good health and an easy grab and go snack. They are a great source of vitamin C, K and B vitamins; as well as a great source of fiber and natural sugar. They aid in the prevention of cancer, tooth decay and heart disease and are a great natural substitute for sugar in recipes as well as an enjoyable snack for the kids.

A few years ago we planted an apple tree in our backyard. I have always liked going out into my own yard and being able to pick fresh fruit from the tree. There is just something about having grown it yourself and being able to go and help yourself that gives me a feeling of pride as well as a good feeling knowing that it is pesticide free and where it has come from.

The kids love the apple tree. Once those blooms in the spring start growing into apples it is hard to get the kids to not pick them off the tree. Matthew is now at the age where he understands that they need to grow and will get bigger, that they won’t be ready until September. But Luke and Chloe just see an apple, they are curious so they pick it. It’s pretty challenging to explain to a 2 year old that they aren’t ready yet.

Nonetheless, we had many apples ‘make it’ to September and they are now ripe and ready for eating. They are so ripe that they were starting to fall off the tree, and I knew that in order to keep them from rotting on the ground that it was time to pick them.

So yesterday morning we went out with Luke and Chloe and picked the apples from the tree. I didn’t think there were that many, but we ended up filling a huge basket. Now the challenge with having a tree and so many apples is what to do with them. Though apples keep fairly well, they do tend to go soft eventually. And I hate to waste good apples, so I make many apple recipes. Apple pie, apple muffins, applesauce, and my favorite apple crumble. I think it is the crumble I enjoy the most, I usually double the topping so that there is more 🙂 but that’s ok.

I find crumble to be a quick and easy dessert that I can make in about 10 minutes and pop into the oven. It is great with ice cream, whip cream or all by itself. We use a non-dairy ice cream called Rice Dream or a non-dairy whip cream. I also have an apple peeler, corer, slicer, that makes making any apple dessert very easy. It peels, cores and slices the apple all at once in less than 10 seconds. I would recommend one of these for anyone who makes things with fresh apples, it saves you a lot of time and is very easy to use.

My recipe, originally from my mother, I have adjusted to a dairy free, sugar free version which is just as delicious as the original. The first time I did it without sugar I used honey in place of the brown sugar which worked well. But recently I have discovered coconut sugar, which melts just like brown sugar would. We now use it on our oatmeal in the morning and for our cinnamon apples when we go camping! And when I made the crumble yesterday I used coconut sugar instead of honey and I would have to say this is now my preference. It tasted just like the one with brown sugar.

So when you make this crumble, you choose which sweetener you prefer, perhaps make 2, each with the different sweeteners and test it out for yourself. I am sure your family will have no problems eating them up!

Unfortunately for me I only used 4 apples in my crumble, which hardly put a dent in the apples I have. I am going to have to get creative over the next little while and see what else I can come up with! In the meantime, enjoy this wonderful apple crumble, whether the apples come from your own tree or the local market, it is going to be delicious!

Topping

1/3 c. coconut sugar or honey

1/3 c. flour

3/4 c. rolled oats

1/3 c. Earth Balance

Filling – 4 large apples * peeled, cored and sliced

Place prepared apples in a 1 liter/ 4 c. corningware dish. If your apples are more tart, drizzle with a little honey, then sprinkle with cinnamon. Mix topping in a separate bowl. Place topping over apples and pat firmly.

Bake at 350 F for 30 minutes in a covered corningware. Remove cover for the last 5 minutes to brown top.

*use your favorite fruit in this crumble instead of apples, such as peaches, blueberries, etc.
