Sugar Free Instant Hot Chocolate Mix

For years I have been wondering how I could make hot chocolate a little faster without the sugary instant mix. I was making it from scratch at home, warming the milk and then adding the cacao powder, mixing it in the blender, etc. which was fine when I was at home. But I really wanted something that was a little easier to use to create hot chocolate when we went camping or backpacking (as it is much more challenging to create it using my at home method when out at the campground!)

But I couldn’t find, or get my head around how to create this, until just before Christmas last year. I was exploring how to make my own hot chocolate bombs at home when I came across a video that broke it down really simply. And I thought wow! how come I did not come up with this before? In essence, hot chocolate mix is a powdered mixture with some kind of sweetener and usually a creamy milk product. How easy! In this day and age with so many alternatives I knew I could totally create something that would be sugar free and dairy free and in a form that was literally an ‘instant’ hot chocolate mix. I was super excited!

I had all the ingredients I needed in my cupboard and I quickly mixed them together. Then we tried it out! Heated up our milk and added the powder in. Wow! It was so good and so easy. And I am so pleased because now I can take it anywhere – camping, hiking, road trips, etc. which provides us with one more tool to enjoy the things we like with ease.

Sugar & Dairy Free Instant Hot Chocolate Mix

1/2 c. cacao powder

1 cup monk fruit sweetener

1 cup coconut milk powder

1/8 tsp. salt

Combine all ingredients in a bowl until well mixed. Store in an airtight container until needed. Add 2 tbsp. to your favorite warmed milk.

Easy Healthy Chocolate Fondue

Chocolate Fondue is one of those easy fun desserts or treats that everyone can get into. Dipping fresh fruit in chocolate (or other yummy things like rice krispie bits, cake, pretzels, marshmallows) is delightful and delicious.

A lot of people find though that chocolate fondue can be a little messy and a little bit too much of a sugar rush – with the chocolate burning if your fondue pot is not just right, or it getting too thick to dip in. Not to mention all the sugary treats you are dipping into an already sugar filled chocolate.

The good news is it doesn’t have to be this way – you can create a healthy chocolate fondue with the yummy treats for dipping (also healthy) and no burning or thickening of your chocolate. And it’s super easy! even the kids can do it.

healthy chocolate fondueYears ago I learned how to make raw organic chocolate, made from cacao butter and cacao powder, then naturally sweetened with your sweetener of choice. It is quick easy and very good for you. Cacao is an ingredient that is considered a superfood, as it is very high in vitamins and minerals like calcium, magnesium, sulfur, copper, iron and zinc, vitamins E, B2, B1, B5, B3 and B9. And it is super high in antioxidants, healthy fat, fiber and protein. Plus when you use a natural sweetener you are now adding in the benefits of that natural sweetener as well (like honey, pure maple syrup, stevia).

You might think well I can just use cocao it’s the same – the fact is it’s not. Though both cocao and cacao come from the same bean they are processed very differently which is why one product (cocao) is stripped of most of it’s vitamins and minerals, while the other (cacao) preserves them.

When you’re making raw organic chocolate, you use a double bowl where you place boiling water in the bottom bowl and place another smaller bowl (that sits on the rim without falling into the bottom one) on top. You simply make your chocolate in the top bowl, using the heat from the water underneath to do your melting and create your chocolate. It’s like a double boiler method without using the stove and creating the risk of burning it!

Once you’ve made your chocolate, you simply keep it in the liquid form for your fondue (as opposed to putting it into molds or a pan to set), by leaving the top bowl on top of the hot water. Place it in the middle of your table or serving area and voila! you are ready to dip and indulge. You do have to be conscious of the lower bowl being hot though and advise those who are sharing the fondue to not touch the bottom bowl (especially important with kids). The chocolate will stay liquid as long as the water is hot and will not burn. As the water starts to cool, the chocolate will set, but all you have to do is add fresh boiling water to your bottom bowl and the chocolate will melt and return to liquid quite quickly. One thing to note is you do need to be careful that you do not get any water into your top bowl with the chocolate as this will ruin your chocolate, so just be aware of that when you’re moving things around.

Otherwise, grab your fork and favorite dipping items and enjoy!

Healthy Chocolate Fondue (this will make enough for 4-6 people and ready in 10 minutes!)

3/4 – 1 cup Cacao butterhealthy chocolate

2-6 tbsp. Cacao powder

1 Vanilla Bean

2 tsp. to start Natural Sweetener of choice (honey, pure maple syrup, etc.)

  1. In a medium metal bowl add boiling water about halfway up the bowl. *a metal bowl is best as it retains the heat well but can get hot to the touch Place second smaller metal bowl on top of large bowl so that it sits on top.
  2. Put desired amount of cacao butter into top bowl. Cacao butter will start to melt.
  3. While cacao butter is melting slice vanilla bean down the middle and scrape out the inside seeds with a spoon. Put seeds into melted cacao, it is ok if cacao butter is not completely melted yet. Stir.
  4. Sift cacao powder into a separate bowl. Once cacao butter is completely melted add 2-4 tablespoons of cacao powder. Taste for desired level of chocolatey-ness. If you’d like it richer add more cacao powder.
  5. Once satisfied with amount of cacao powder add natural sweetener of choice. Start with 3 teaspoons and mix. Taste, if desired level of sweetness has not been reached, add 1-2 more tablespoons and taste again. Once level of desired sweetness has been reached you have your base chocolate.
  6. Leave in liquid form and bowls on top of each other and serve. Use pot holder or oven mitt to transfer bowls if moving to another spot.

*Be very careful not to get any water into your chocolate as it will not work if you do. If your second bowl sits nicely on top, this should not be an issue as you do not need to lift the second bowl off the one with the water in it until you are done making your chocolate.

Basically you can dip whatever you want into your chocolate (some people love chocolate dipped bacon 🙂 Fruit is the most popular and the quickest to prepare as it is most likely on hand – but if you’re feeling adventurous or just want to change it up a bit try out these other options – which can be healthy and sugar free too! below

Fresh fruit of choice – banana, apple, orange, strawberries, pineapple, cantalope, etc.

Make sure you have forks or other utensils to facilitate dipping without items being lost in the chocolate. Fondue forks work great but are not required as regular forks work just as well.

This is super super easy to do with kids and is always a hit. I did it with my Mini Chefs class, 3-5 year olds and they loved it! There were many chocolate faces that day and I did not send them home to parents on a sugar high.

I’ve also succesfully done this with adults many a time and I usually have someone licking the bowl at the end 🙂 The nice thing is you can make as much as you want and if you run out you just make more!

Rich Creamy Dairy Free Chocolate Ice Cream

One of the most popular frozen sweet treats in the summer is most definitely ice cream. It’s great to be able to stop and enjoy an ice cream cone on a warm summer’s day. In fact I was drooling over them yesterday at the zoo, as everyone was walking around with a yummy soft serve ice cream.

When we went dairy free I was sad to miss out on all the wonderful ice cream flavors and the sweet yummy treat it provided. (I really missed ice cream and also cheese when I went dairy free, cause at the time there were not any really good dairy free alternatives). Not only was ice cream a great summer treat it used to be a staple at my house! When we were little we’d often anticipate ice cream after dinner, with my Dad being the worst contender.

I knew there were ways though that I could still indulge in my ice cream fetish that were still yummy and delicious without all the dairy. My first step was to buy a ice cream maker. Though not a necessity to make ice cream, there is just something fun about watching your liquid concoction turn into yummy ice cream. I also tried out some of the non dairy ice creams on the market, which there are some good ones, such as Rice Dream and Coconut Bliss, but they are very expensive and making my own was a much cheaper alternative. Besides I could control what I put into my ice cream and could avoid all the preservatives present in store bought brands.

dairy free chocolate ice creamAnd honestly, making your own ice cream does not take long at all. It is basically the time to mix your ingredients in your blender and churn it in the ice cream maker (usually about 30 minutes tops). So if you time it right there really is no waiting at all (and even if there is, doesn’t that create anticipation and excitement therefore enjoying even more the result?)

Making ice cream is also fun and easy to do with the kids. My kids help mix everything up and also love watching it churn. So far we have tried a few dairy free ice cream recipes, such as Simple Vanilla and Strawberry Banana, but our favorite so far is Peanut Butter Ice Cream, oh so yummy!

But what I like about this dairy free chocolate ice cream is the fact that there is no milk in it whatsoever, not even non-dairy, and uses cashews instead to create the creamy texture, which really amps up the nutrition. Cashews are a great source of fibre and are packed with vitamins, minerals and antioxidants like copper, Vitamin E and magnesium. I love it when I get to enjoy a yummy sweet treat and it is super good for me and for the kids (nothing like sneaking in the good stuff right?).

The other element that is important when I am trying out recipes is that they are sugar free, using natural sweeteners to sweeten if needed. So not only is this dairy free chocolate ice cream without dairy, it also has no refined sugars or sweeteners. And believe me taste is not compromised. This is a rich creamy chocolate ice cream that you will not believe is sugar or dairy free. You can serve it to you friends and they will be none the wiser.

My kids of course, gobbled it up and asked for seconds. Chloe got chocolate all over her face and they both got a little creative adding raspberries that they’d freshly picked from our raspberry bush, which made it even more delicious.

You could also add in other ingredients to this chocolate ice cream, like coconut or chocolate pieces.

Dairy Free Chocolate Ice Cream

1 3/4 c. cashewsdairy free chocolate ice cream

1 3/4 c. water

1 c. pure maple syrup

2 tsp. vanilla

1/2 c. cacao powder

Combine all ingredients in a blender and mix well. Pour into an ice cream maker and freeze according to instructions.

I found that our ice cream maker brought it to a nice soft serve consistency, which is what I believe most ice cream makers do. You can serve as is or if you’d like to have a firmer consistency transfer contents from ice cream maker into freezable container and put in your freezer til firm.

*If you do not have an ice cream maker don’t despair! Once ingredients are combined pour into a freezeable container with lid and place in your freezer for 6-8 hours or overnight. The advantage of an ice cream maker is simply that your ice cream is ready a little bit faster.dairy free chocolate ice cream

A Little Indulgence – Dairy Free Sugar Free Chocolate Icing

dairy free sugar free chocolate icingI have a secret to share with you. It’s one of those don’t tell my kids or I’ll never live it down kind of secrets. I have a bit of an addiction. You know that chocolate icing that I made to ice the cupcakes? Yeah there was some leftover…there’s not anymore…

When I found this recipe for dairy free sugar free chocolate icing I was in heaven. It’s super simple to make and totally delicious! One would never know that it was anything near the sugar free area, let alone no dairy. It is creamy, smooth and definitely chocolatey! It is so good I sometimes eat it with a spoon. Hence, why there are no longer any leftovers in my fridge. Once in a while, when I have that craving for sweet I just dip in and take a spoonful or two…ok sometimes three. I often think to myself I will just freeze the rest and then when I need icing I can just pull it out and use it without having to make a whole new batch (the recipe is quite big – even when I half it I have generous leftovers). But unless I pop it into the freezer right away, yeah, I eat it, in big heaping spoonfuls and hope that my kids don’t find out (because I don’t want them to do it to! This simple recipe requires only 4 ingredients and your food processor or blender. I use cacao powder for that extra superfood boost – as cacao is high in magnesium, B vitamins, protein and fiber – but you may also cocao, though not as beneficial nutritionally. And I use this icing recipe for all kinds of things, not just cakes and cupcakes. We put it on ice cream, fruit and last summer we discovered that it is a great substitute for some of those good old camping recipes, like s’mores, or the new one we discovered at Scout camp – a combination of banana, nutella (we use the chocolate icing instead), butter and toasted on a bun – yum!

So regardless what you are going to use it for, whether it be a little indulgence eating it with a spoon, cake or a camping treat, enjoy this quick easy dairy free sugar free chocolate icing guilt free.

Dairy Free Sugar Free Chocolate Icing

3/4 cup Earth Balance vegan spread

1 tsp vanilla

1 cup pure maple syrup (high in minerals such as maganese, zinc, potassium and no artificial ingredients compared to imitation syrups containing high fructose corn syrup, added and artificial ingredients, contain no minerals)

Process all ingredients in a food processor or blender until smooth and creamy.

Use immediately or may be stored in fridge for up to one week or frozen (unless you eat it all first).dairy free sugar free chocolate icing

Kids Healthy Cooking – Healthy Chocolate with Natural Sweeteners

Kids and chocolate. They go together well. All the memories of chocolate covered faces, whether from ice cream or pudding or just a good old fashioned chocolate bar. Yes they say too much chocolate is not good for you, but honestly there is such a thing as healthy chocolate.

A lot of the trouble with chocolate is the amount of sugar in it, but chocolate without sugar and natural sweeteners instead, is a different story. Chocolate itself is rich in antioxidants and is actually very good for us. It is the sugar that is the problem.

healthy chocolateWhen I learned to make my own healthy chocolate, I was surprised at how quick and easy it was. It was so easy that I came home and made it with my oldest son, who at the time was only 6. Four simple ingredients gave us our base chocolate, and then we could create whatever we wanted. He loved it! and wanted to make more. Now my twins who are also 6, love making it as well. It is so easy to make with kids.

So when it came to our last class of Mini Chefs, making healthy chocolate was really a no brainer. I wanted a nice sweet, fun, but healthy treat, so this was perfect. In class, we made the plain chocolate and kept it in liquid form for fondue, dipping a variety of fruit into it; such as apples, oranges and bananas. All of the kids loved it! And yes ended up with chocolate faces 🙂

Raw Organic Chocolate

Ingredients:

3/4 – 1 cup Cacao butterhealthy chocolate

2 -6 tbsp. Cacao powder

1 vanilla bean or 1-2 drops vanilla extract (use a pipette if using vanilla extract as you only need a tiny bit, adding too much can ruin your chocolate)

2 tbsp. to start of pure maple syrup or honey

*amounts depend on how much chocolate you want to make

Boil water in kettle. Pour boiled water into a large metal bowl, place second smaller metal bowl on top of large bowl so that it sits on top. Place cacao butter into top bowl. Cacao butter will start to melt. While cacao butter is melting slice vanilla bean down the middle and scrape out the inside seeds with a spoon. Put seeds into melted cacao, it is ok if cacao butter is not completely melted yet. Stir.

Another option at this point is to add additional ingredients such as nuts, dried fruit, coconut, essential oils (ensure that the essential oils you are using are safe to ingest), etc and pour onto a cookie sheet to let set. Or  make it with fillings such as peanut butter for peanut butter cups (as pictured above) or nuts in the middle or caramel. For this you simply put a bit of chocolate in the bottom of your mold, let it set then add your peanut butter (or other chosen filling) and top up the mold with chocolate and let set completely. Chocolate is best set in freezer but may also be set in fridge.healthy chocolate

I had also been promising the kids we would make ice cream for a number of classes and many of them kept asking when we were going to make it. Kids Healthy Cooking – Healthy Sweet Treats

IMG_6963As human beings one of our biggest vices is all things sweet. The same goes for our kids as well, they prefer bananas over carrots, the cookie over the banana and so on. But what if we could create healthy sweet treats for kids that they would not only love and meet their need for sweet, but would provide them with a nutritional impact full of vitamins, minerals and other nutrients?

When we decided to go sugar free at our house I got a lot of looks from other people and questions about how can I deny them all the yummy things that are part of a regular kids life, like cupcakes, chocolates and cookies. The truth is they have never been denied, they still enjoy all those things at our house and more. The difference is not in the taste which is just as yummy if not more so than the ‘original’ – but in what they are made of. We have simply switched to natural sweeteners and added in foods that are super high in nutrients. And honestly they not only gobble them up but request them.

It is easy to make the switch at your house too. Just start slowly adding in one or two recipes and go from there. Make it easy. Plus if you get the kids involved in making these healthy sweet treats your chances of them eating them goes up simply because they have helped.

Also starting with ingredients and foods that they like is key to success when getting kids to eat and try new things. If you pick something they like, they are already interested and will be more open. This is why just before Valentine’s Day in our Mini Chefs class I chose two healthy sweet treat recipes for kids that were chocolate. You should have seen the kids eyes get big and how excited they got when I told them what we were making that day was chocolate (same thing happened when we made the chocolate banana smoothie a few weeks ago).

They were all so excited to try it when it was ready to eat, even though they had watched some ‘weird’ ingredients go in like avocado and chia seeds. Chocolate overruled it all.

Raw Chocolate Pudding

The thing I love about this recipe is the fact that you simply put all the ingredients in the blender and mix. In just minutes you have a smooth, fluffy and delicious chocolate pudding.

2 ripe bananas, peeled and slicedhealthy sweet treats for kids

1 avocado, pitted and peeled

2 tbsp. raw cacao powder (this is different than cocao powder)

1 tsp. agave nectar

Put all ingredients in blender in the order listed. Start on low, slowly turn speed up to high. Blend for 30 seconds on high or until desired consistency is reached. *it’s sweet as is, but if you’d like to increase sweetness add more agave nectar to taste – agave is twice as sweet as sugar so use small amounts and taste before adding more 

Avocados are fantastic additions to recipes. Not only are they mild in taste, they are high in vitamins and minerals such as Vitamin K, B5, B6, C and E as well as Omega 3’s. They offer a lot of health benefits like improved mood, reduced stress, good eye health and more. They are also a great food that actually curbs sugar cravings! Because they are high in healthy fats they slow digestion and prevent the body’s blood sugar from spiking after eating. It is also true that when we crave sugar it is often because we are missing certain nutrients and adding a healthy fat will curb this craving as the body becomes satisfied.

No Bake Chocolate Macaroons

1 bananahealthy sweet treats for kids

¼ c. coconut oil, melted

¼ c. pure maple syrup

½ tsp. vanilla or 2-3 drops madagascar vanilla essential oil

6 tbsp. cacao powder

1.5 c. unsweetened coconut

1 tbsp. chia seeds

small pinch sea salt

In a medium size bowl mash banana well until there are no clumps. Stir in melted coconut oil, maple syrup and vanilla. Sift cacao powder and stir into banana mixture. Stir in chia seeds, coconut and salt.

Line baking sheet with parchment paper. Drop a teaspoon at a time onto parchment paper. Put in freezer for 20 minutes or until firm. Store in freezer until ready to enjoy.

Makes approx 15 macaroons

Chia seeds are not only high in dietary fibre and protein as well as many other vitamins, they make you feel full as well as being an ingredient that stabilizes blood sugar. Cacao powder is rich in vitamins and nutrients such as iron, antioxidants and high in B Vitamins. Cacao does differ from cocoa as though they come from the same plant the difference is in how they are processed and the amount of nutrients that are left in it. So have fun, enjoy! not only will the kids love these healthy sweet treats you may find that you love them to (I have a hard time eating only one chocolate macaroon at a time…) They are quick easy and so yummy you and your kids will forget that they are actually good for you.

A Warm Drink on a Cold Day

warm capuccino-saidaonlineThere’s nothing like coming in on a cold day and enjoying a nice warm drink. Cuddling up on the couch, your hands surrounding the mug for warmth as the steam floats up and you inhale the beautiful scent of coffee, hot chocolate, tea or hot apple cider, to name a few.

It doesn’t matter what you have been doing, if you’ve been enjoying some time outside doing outdoor activities, toboganning, skating, skiing or even just shoveling the walk, there is something about that warm beverage that offers you comfort like nothing else.

My kids love cuddling up on the couch with their drinks and maybe some cookies or other treat and watching a movie, tucked up under blankets. Nice and cozy and relaxing.

warm-drinksOf course when we decided to eliminate sugar at our house we could no longer default to the hot chocolate mix we bought at the store (and we used to buy the big can, you know that one that is super tall and would last for months). I know in the good old days hot chocolate was simply milk heated with cocoa mixed into it, but it had been a long time since I’d done that. In fact I remember one time when I was little and my aunt was looking after us, she did just that, and my sisters and I looked at her like she had 3 heads and asked her what the heck she was doing. In the end she ended up making the instant stuff but I know now what I missed out on.

I really like the milk heated version as I find it to be richer and creamier, even though it does take a little bit more time and work to do so. What I do now for the kids is actually a little fancier than that (something I discovered in my Raw Chocolate Making class), but it is soooo yummy and also very good for you.

Now I use a mix of almond milk, cacao powder (considered a superfood and high in minerals such protein, zinc, and iron), natural sweetener of choice and depending on the day some added spices. It’s actually quite easy to do and tastes delicious! I also like that I can make it different every time depending on what I am feeling like that day.

Dairy Free Hot Chocolate

3-4 tbsp. cacao powder

3-4 tbsp. natural sweetener (I usually use pure maple syrup, but you can use honey, stevia, etc.) *amount of sweetener depends on sweetener used and personal preference

spices – sprinkle of to taste cinnamon and cayenne, or lucuma powder and mesquite powder

Place all ingredients into blender. Turn on low, then turn up to high, blend well. Pour mixture into pot. Heat on medium to desired temperature. Pour into mugs and serve.

The Magic of Chia Seeds

Recently I have discovered a lot of recipes with chia seeds in them. I haven’t been purposely looking for them, the recipes I have been picking up lately (such as Chocolate Macaroons) just happen to have them in it. The nice thing about this, I discovered, is that chia seeds are considered another superfood with multiple health benefits. They stabilize blood sugar, reduce cravings for sweets, improve mental focus, are a high quality protein, improve cardiovascular health and many more.

When I first heard about chia seeds I actually wasn’t sure what to do with them and thought they were funny things, these tiny seeds that look like poppy seeds. I knew they had great health benefits but what was the use if I could not use them? Then I found this recipe for chia seed pudding, which I have to admit when I first looked at it thought “Eww! seeds in my pudding”. But since I am into expanding my repertoire of sugar free and dairy free treats I thought I would try it.

I decided to make it for the first time when I was in BC this summer visiting my parents. My Mum is into these things as well and I always like a willing crowd to be my guinea pigs. The first thing I loved about this recipe is that it takes no time at all to make; less than 5 minutes. You literally whisk together the ingredients in a bowl and let it sit. That’s it. I didn’t even divide it amongst individual glasses like it suggested, I just left it in the bowl I made it in. (I also found that though this recipe says serves 4 but you can easily serve 6 and everyone has a decent sized portion).

Raspberry Chia Seed Pudding

The second thing I really liked is that when you let the chia seeds sit for a bit they actually expand (size and weight), so it gives the pudding some texture, similar to tapioca. Which is another health benefit, as this ‘gelling action’ when the seed is exposed to water gives you a full feeling for hours – which is great for maintaining a healthy weight. (I also think it’s fascinating 🙂

The pudding was a hit with my parents and the kids. Enough that I have made it again recently and will do so again. I have also discovered a recipe for a Raspberry Chia Seed Pudding, which I have yet to try, but imagine will be just as good.

Chocolate Chia Seed Pudding

1 1/2 c. coconut milk

4 tbsp. maple syrup or honey

2 tbsp. cacao powder

1 tbsp. vanilla extract

1/3 c. chia seeds

**top with berries or coconut cream if desired

Whisk coconut milk, maple syrup or honey, cacao powder and vanilla until smooth. Stir in chia seeds. May divide evenly between 4 glasses or leave in bowl. Let sit at room temperature for 2 hours and serve.

Serves 4 **(You can easily serve 6 with this recipe and have decent sized portions if desired)

 

Yummy Easy Vegan Treats (with chocolate!)

I love shopping at Community Natural Foods, a local organic and natural food store. Not only do they have a wide variety of products available and good prices, they often have someone there sampling yummy recipes. Not only do they provide the samples for you but they also have the recipe printed out and ready for you to take a copy!

Not only are the recipes delicious they are good for you, often a vegan recipe with natural sweeteners and usually a little pinch of some kind of superfood in there. This is where I have gotten the Cinnamon Salted Caramel Brownie recipe that I made and shared with all my friends in Kananaskis last January – which everyone loved and would never have known that it was no dairy, no sugar unless I had told them. So I was quite excited when I went in on Saturday and discovered 2 yummy recipes to try.

I was so excited I came right home and made them both, even having to run back out to the store to grab a missing ingredient. Fairly quick and easy they both turned out fabulously! I even shared a sample with a couple of my neighbors who quickly asked for the recipe.

I love it when I find good recipes like this as I think that a lot of people feel that eating healthy means more fruits and vegetables and that you have to give up a lot of the sweet treats, which just isn’t true. You can find many, if not even more delicious in some cases, treats that not only satisfy your ‘treat fix’ but provide many essential vitamins and nutrients that our bodies need. It’s great, have a sweet and it’s actually healthy and beneficial for you!

No Bake Chocolate Macaroons

1 banana

1/4 c. coconut oil

1/4 c. pure maple syrup

1/2 tsp. vanilla extract or 2-3 drops madagascar vanilla essential oil

6 tbsp. cacao powder

1.5 c unsweetened coconut

1 tbsp. chia seeds

small pinch sea salt

In a medium size bowl mash banana well until there are no clumps. Stir in melted coconut oil, maple syrup and vanilla. Sift cacao powder and stir into banana mixture. Stir in chia seeds, coconut and salt.

Line baking sheet with parchment paper. Drop a teaspoon at a time onto parchment paper. Put in freezer for 20 minutes or until firm. Store in freezer until ready to enjoy.

Makes approx 15 macaroons.

Almond Butter Rice Crispy Treats

1/2 c. chunky almond butter

1/2 c. brown rice syrup

1 tbsp. vanilla

1 tbsp. Earth Balance

1/2 tsp. sea salt

3.5 c Erewhon Brown Rice Crisp cereal

Chocolate Drizzle

1/4 c. homemade raw organic chocolate, left in liquid form

1 tbsp. almond butter

pinch salt

Shredded coconut for garnish

Line an 8×8 inch square pan with parchment paper.

In a large pot put in brown rice syrup, Earth Balance, almond butter and salt. Melt over medium low heat until well combined and heated through. Remove from heat, stir in vanilla; then stir in brown rice cereal.

Scoop and spread evenly into 8×8 pan. Press down with finger or roll with a pastry roller (just a note about the pastry roller – I had never thought of using this before and seriously it is the cat’s meow. Way easier then trying to press it into the pan with your fingers and makes it flatter and smoother). Place in freezer for 5 minutes while you make chocolate glaze.

Make raw organic chocolate according to recipe (cacao butter, vanilla, natural sweetener and cacao powder – for full recipe and directions go here). Stir in almond butter and salt.

Remove pan from freezer and drizzle with chocolate. Sprinkle with coconut and place in freezer until firm – about 15 minutes. Slice into squares.

Bars will hold their shape quite well at room temperature but may be stored in freezer or fridge.
