Coconut Curry Chicken with Pineapple

IMG_3328I love barbequing! I love how it’s little dishes, less mess and usually very delicious! In fact, I enjoy barbequing so much that we usually bbq year round! Regardless if it is -30 or plus 30 C. (Thankfully it is not usually -30 C around here in the winter, but it is often below zero).

I know! You are probably thinking that this woman is crazy; but I’ve been out there in my winter boots flipping burgers or tending the steaks. Breath coming out in white whisps as it floats into the air. I never worry about the weather forecast or if it is ‘barbeque’ weather, as it is always barbeque weather for me!

It wasn’t until recently though that I actually learned to barbeque. Yes we were barbequing year round but it was my husband who was doing it. In fact I had never even made something as simple as the burgers! I would always mix the ground turkey or chicken and make the patties but never actually cooked them myself. I have no idea why I did this. Perhaps I thought it was the ‘mans job’, or perhaps it was just my way of diveying up the jobs, regardless up to a couple of years ago actually doing the cooking on the barbeque was a whole new thing to me.

Barbecue-gaz-1They say bbqing is an art and I would agree. Certain meats need lower temperatures and longer times, while others do better on a medium to high heat. I learned a little from my Dad and remembered what he said to do as I watched him barbeque over the years. And I did a little figuring it out myself. Overall I am a very good barbequer and I sometimes even take over that task when I am at my parents house!

The one thing about barbequing though, especially if you do it as often as I do, is variety. I believe there is more to barbequing than just burgers and steaks, so I like to explore other recipes are and what other things you can do. I have found that the barbeque has way more options for cooking on it then I originally thought, expanding my repertoire of dishes quite a bit. (Did you know you can do pizza on the barbeque? I did try it once, not so successfully mind you, but it can be done!)

A lot of barbeques these days come standard with rotisseries as well, which opens up a whole other path of options for you, such as roast chicken, roast or lamb. My mouth just waters at the thought of it….

One of my favorite recipes that I have discovered for the barbeque is Coconut Curry Chicken with grilled pineapple. Originally from Clean Eating Magazine, it is really easy, very moist and tastes delicious. It only takes a few minutes per side to cook and voila! dinner is ready. Just add rice and a nice salad (or other vegetable) and you have a complete delicious meal. The only trick is it does require a little bit of pre-planning as you need to marinate the chicken for a couple of hours before cooking it on the barbeque.

The kids love it and my oldest usually gobbles up two chicken breasts on his own (yes he may be a growing boy but he can also be a bit of a picky eater, he will not eat things he doesn’t like no matter how hungry he is). I find the pineapple slice on the top really makes it, the flavors going very well together.

So whether you feel like barbequing tonight or saving this recipe for warmer weather, you’ll want to give this tasty coconut curry chicken a try. Completely dairy free, sugar free and gluten free, it is a dish that will be enjoyed by all.

Coconut Curry Chicken with Pineapple

4 boneless chicken breastsIMG_3324

**1 1/2c. coconut curry marinade

1/2 c. unsweetened coconut

4 fresh pineapple rings

Place chicken in a large ziploc bag. Add coconut curry marinade and seal, squeezing out as much air as possible. Refrigerate for 2-6 hours.

In a non stick skillet, heat coconut on medium heat until lightly browned. Transfer to a plate to cool.

Turn BBQ on and heat to medium high. Lightly oil grate with olive oil (I find best is to brush on with heat resistant pastry brush). Remove chicken from marinade and pat dry with paper towel. Place chicken on grill and reduce heat to medium low (I find with chicken a little lower heat and a little longer time, keeps it moist and prevents it from drying out). Grill chicken until cooked through, about 3-5 minutes per side.

If you have room on your grill with the chicken place pineapple rings on and cook until lightly charred, about 2 minutes per side. If you don’t then you can do the pineapple at the end quickly once chicken is cooked.

To serve, sprinkle toasted coconut on chicken and one ring of pineapple on top of each  chicken breast.

Serves 4*

*I have found the marinade can easily accommodate 5 or 6 breasts and creates less waste

**Coconut Curry Marinade

2 c. coconut milk

2 tbsp. curry powder

2 tsp. sea salt

1 tsp. black pepper

In a medium bowl, whisk all ingredients together. Can be made ahead of time and stored in an airtight container in the fridge for a few days. Can be used on chicken, pork, seafood and vegetables.

Yummy Pumpkin Muffins

IMG_4234There’s nothing better than a warm pumpkin muffin, fresh out of the oven, with a nice bit of butter on it, melting as the muffin melts in your mouth with that first delectable bite. I love pumpkin and that is one of the many reasons I love this time of year. In the Fall, pumpkins and pumpkin recipes and dishes abound.

Whether it be preparing for the Thanksgiving feast or the events at Halloween there are pumpkins everywhere. And I am quite happy to take advantage of this and enjoy as much pumpkin as I can. There is so much you can do with pumpkin from soups to pies, cheesecakes, even drinks like martinis and lattes! (Who else can’t wait for Fall so we can experience once again the delectable flavors of a pumpkin spice latte)?

IMG_4224Muffins are one of the quickest and easiest ways to use pumpkin. They are great for snacks, to put in lunches and easy to freeze, if they last that long. My kids love muffins of any kind and will gladly gobble up the pumpkin ones just as quick as the strawberry rhubarb, apple, blueberry, etc. Of course I tend to make my favorites (or honestly what is in abundance at our house, for instance earlier in the Fall we had all the apples from our apple tree).

Over the past couple of years I have adjusted my pumpkin muffin recipe, passed down from my Mom to make it sugar free and dairy free, meeting our new dietary choices. I have IMG_4237also been experimenting with gluten free recipes as well and therefore have found some good gluten free pumpkin muffins as well. (Usually I still need to do a little adjusting with the sugar, but it has become second nature now and is a quick and easy substitution).

So I make both at times, as my kids will eat either, though I am finding I am moving more towards gluten free only because I am noticing how my body is feeling after gluten sometimes (which is not so good). And today I am sharing both recipes with you. Both are equally easy and delicious, so it is simply your preference or dietary needs to decide which one to try (You could, like me, make both).

Gluten Free Pumpkin Muffins

1/2 c. tapioca flour

1/2 c. garbanzo flourIMG_4225

1/2 c. brown rice flour

1 c. coconut sugar

3 tbsp. flaxseed

1 tsp. baking soda

1 tsp. nutmeg

2 tsp. cinnamonIMG_4220

1/2 tsp. sea salt

1 c. pumpkin puree

1/2 c. safflower oil

2 eggs

1/2 c. dates or raisins

In a medium mixing bowl, mix dry ingredients thoroughly (flours, coconut sugar, flaxseed, baking soda, salt and spices). In another bowl, mix wet ingredients together (pumpkin puree, safflower oil, eggs). Make a well in the center of dry ingredients and add wet ingredients to dry. Stir until just combined, then mix in dates or raisins.

Line muffin tin with muffins cups or grease with coconut oil. Fill each cup. Bake at 350F for 20-25 minutes.

Makes 12 muffins

Pumpkin Muffins

1 3/4c. all purpose flourIMG_4223

1/2 c. coconut sugar

3 tsp. baking powder

1/2 tsp. sea salt

1/2 tsp. cinnamon

1/4 tsp. cloves

pinch ginger

2/3 c. almond milkIMG_4233

1/2 c. pumpkin

1/3 c. olive oil

1 egg

1/2 c. dates or raisins

In a medium sized bowl, beat together egg, pumpkin and oil. Add almond milk. Sift together dry ingredients and add to mixture. Mix in dates or raisins.

Line muffin tin with muffin cup or grease with coconut oil. Fill muffin cup and bake at 400F for 25-30 minutes.

Makes 12 muffins

Strawberry Rhubarb Muffins

IMG_4129I think I have finally rubbed off on my mother. All these years of me changing my eating (dairy free, sugar free and sometimes though now more often gluten free) and hanging out at her house. She was always very accommodating and ensured the meals met our needs.

But now she has gone off on her own! and is giving me all kinds of new recipes to try. It kick started when she and my Dad did a cleanse this past summer. Mum discovered some fabulous and tasty new recipes that they have now made part of their regular diet. So when they were here visiting recently Mum made a couple of her new favorite gluten free muffin recipes – pumpkin and a fruit one. I say a fruit one because we had yet to decide what kind of fruit it would be. This recipe (below) Mum uses as a base but has experimented using different fruit and nut combinations, like peach pecan, nectarine almond, etc.

strawberriespictureThe day she was making the muffins at our place, my daughter Chloe, suggested Mum use strawberries and rhubarb. We just happened to have some rhubarb in the the freezer left over from earlier in the summer when I made a sugar free strawberry rhubarb pie for the first time, and Mum bought some strawberries. Voila! We were set.

Mum was a little unsure how they would turn out but was willing to try the combination. For me, knowing how much I enjoy strawberry rhubarb pie had no doubt that it would be fabulous!

And of course, they were. Fresh and warm out of the oven, all the adults got to try them first, as the kids were all in bed (yay for us!). They were delicious! Moist, tasty and full of flavor. My Mum thought they could use a little more fruit but she prefers lots of fruit in her muffin. I thought it was fine, just our personal preferences.

What I also really like about this recipe is there are no eggs, you use chia seeds as the replacement and I think that is fabulous! Not only do you eliminate the eggs, but now you are adding a superfood. Fantastic!

Gluten Free Strawberry Rhubarb Muffins

2 c. brown rice flourRhubarb-timperley-early1-300x300

1/2 c. arrowroot powder

1/2 tsp. baking soda

2 tsp. baking powder

1 tsp. cinnamon

1/4 tsp. salt

2 tbsp. chia seeds

3/4 c. warm water

1 c. strawberries

1 c. rhubarb

1/3 c. coconut oil, melted

1/3 c. coconut sugar

1-2 tsp. vanilla

1/2 c. walnuts

In a large bowl combine brown rice flour, arrowroot powder, baking soda, baking powder, cinnamon and salt.

In another medium sized bowl, whisk together chia seeds and water. Mix in strawberries and rhubarb, coconut oil, coconut sugar and vanilla.

Pour wet ingredients over dry and gently mix. Do not over mix. Fold in walnuts.

Line muffin tin with paper liners or grease tin with coconut oil. Spoon batter into each cup. Bake at 350F for about 20-25 minutes.

Enjoy!

It’s that time of year again, back to school, back to routines and also time to try new things.   We had a fantastic summer full of camping trips, days at the lake and all kinds of other adventures. You may have noticed I was suspiciously absent during the month of August. This is because I packed up the kids and went to Australia for 3 and a half weeks! My sister is there for a year with her family as her husband is on a teacher exchange.

I couldn’t resist the opportunity, as Australia is a place I absolutely love! And even though I have been before there is so much to see and do, it was time to go again. Plus this time we included a week in New Zealand, which I had not been to before.

As a result I have tons of things to share with you and lots of blog posts to write about where to go and what to see in that area of the world. So this Fall I will include a weekly feature about some fabulous place in Australia or New Zealand. Giving you the scoop on how it works for families and children and what recommendations we have.

Also this Fall I will continue with sharing fabulous recipes that I have found and tried, that are sugar and dairy free, and sometimes gluten free. There seems to be an endless stream of yummy recipes out there! and I have a big bag (literally) full of them to try. For instance this morning I made Apple Cinnamon muffins again, which I tried last year and we really enjoyed. This year I tried something a little different, using leftover almond mash from making almond milk. They were so moist and yummy… Of course I promptly shared them with my neighbor and friends this morning over coffee as we sat outside amongst the beautiful fall leaves.

These are the posts I will guarantee in amongst all the joys, trials and insights of having 3 children, whether it be tips on how to get them out the door in the morning or programs and crafts that I would recommend. And sometimes whatever moves me, whether it be a good book I’ve enjoyed or a moment I need to share. This is the joy of blogging!

Right now I am up to my ears in apples, like last year, we have reaped an abundant crop from our tree and are enjoying apple everything. I have made more crumbles than I can count, as well as pie, muffins, smoothies (ever tried an apple pie smoothie? Yum!), juice, etc. Though I have recently discovered apple butter – OMG! delicious and might try making that.

Fall is also my most favorite time of year! and I get super excited and motivated at this time of the year. Seasonally it is a time of ending, getting ready for a period of ‘rest’, but I see it as a time of new beginnings with all kinds of things that I want to try, or the kids want to try. Plus I love the warm golden sunny days, and the crisp Fall evenings. Gorgeous.

Taste of Nature – a Fabulous Sugar Dairy & Gluten Free Snack in a Package

Today I am very excited to be doing my first official product review!

When we decided to go sugar free in our home, it meant making a lot of things that we normally purchased and enjoyed, from scratch. Bread, salad dressings, treats, and granola bars were some of the items that contain refined sugars, which was one of the ingredients we were avoiding. I spent hours in the kitchen creating and trying new recipes, finding things that worked and we liked. And though I was happy to be making this healthy change for my family, I was not loving being in the kitchen for most of my day. My oldest son, was also struggling with wanting the prepackaged stuff that everyone else had even though what I was providing was indeed tastier and better for him.

IMG_2951Each time I went to the grocery store I would look in the organic/ health food section to see what ‘packaged’ products they had come up with. Yes you could find all kinds but they usually contained ingredients that we couldn’t have, like dairy, refined sugar and on some occasions gluten. I could find a dairy free product but it had gluten, or sugar free but it had dairy and nowhere could I find one that met all 3 (and tasted good, we have tried some that looked promising but they did not taste good at all).

So last week when doing my regular shopping trip I was very pleased to discover these fruit and nut bars by Taste of Nature! A Canadian company, these organic snack bars are delicious and come in a variety of flavors such as Canadian Maple Forest, Quebec Cranberry Carnival and California Almond Valley. Each flavor is a different mix of nuts, seeds and fruit, such as raisins, almonds, sesame seeds to exotic ingredients like dried cherries, pomegranite and cashews.

I immediately bought a couple and brought them home to try. We didn’t even make it out of the parking lot and the twins were asking to have one. So we sampled and shared the Brazilian Nut Fiesta. Wow! These bars were good! Sweetened with agave nectar and brown rice syrup these bars contain no artificial flavors or additives, have no dairy and no gluten! They are also certified organic, vegan, and kosher! We had hit the mother load!

I was so excited to have found these that I immediately came home and checked out their website. I was thrilled to see that they offered many more flavors such as Niagara Apple Country, Nova Scotia Blueberry Fields and Persian Pomegranite Garden. This is where I also learned this company aims to produce zero carbon footprint, uses green business practices and that providing quality products and caring for our environment are very important to them.

IMG_2955I was sold! This was a great company and one that met all our dietary needs. Woohoo! I could now spend a little less time in the kitchen 🙂

Over the course of the next week we tried a few more flavors, Canadian Maple Forest, Quebec Cranberry Carnival and Louisianna Pecan Parade (one of their newest flavors and my favorite as it has cashews and dried cherries in it!) Their other new flavor is Polynesian Coconut Breeze, which I am very excited to try as I love coconut as well!

Of course the twins have enjoyed all the flavors and my oldest son’s favorite is also the Louisianna Pecan Parade.

I am so pleased to see Canadian companies being innovative and creating products that are meeting the growing demands and changes of a healthier population and recognizing that there is a need and market out there. And the variety that this company provides is fabulous!

The other thing I was pleased with was the price for this product. At less than $2 per bar I thought this was quite reasonable considering the quality and variety of ingredients. We will definitely be purchasing more of these great bars and adding them to our healthy snacks!

Broccoli Cheese Soup

broccoli-soup-bryons-lrgI wanted to post a recipe today for something sweet, especially for all you party goers who are joining me from the UBP; but I finally perfected my Broccoli Cheese Soup recipe and had to share – now both dairy free, gluten free and delicious!

For the past while, I have been just making a straight creamy broccoli soup, which was ok, but I missed the cheese. And the kids, who use to gobble it up, were kind of taking it or leaving it when I made it. In fact I wasn’t eating it at all (ha ha)!

So earlier this week when I was making it for lunch I decided to experiment. First I decided to use brown rice flour instead of regular white flour, as I am trying to make more things gluten free in our house (plus I have noticed that I feel tired after some things with gluten). Then I decided that I was going to throw in some of this fabulous non-dairy cheddar cheese that I discovered by Daiya foods. See one of the things I really do miss about not having dairy is cheese. And though there are lots of choices out there now for non dairy cheeses, I just couldn’t find one that I liked. They either didn’t melt well, or taste good and they definitely weren’t tasty enough to put on a cracker (yuk!). But recently I discovered this vegan cheese made by Daiya, a Canadian company actually (Go Canada) based in Vancouver. It melts, it tastes good and everyone gobbles it up! I think it is very close to tasting like dairy cheese and they make it in all kinds of flavours! They even sell it in slices so, guess what? We are now having grill cheese once again, which honestly used to be a staple for lunch.US-Shreds-Cheddar

Anyway I tossed a handful of the Daiya grated cheddar into the blender and mixed it all up.  It was fantastic! Luke gobbled it up, I ate it and will eat it again (this is a good sign). And it tasted really cheesy, like you would expect a nice cheesy soup to taste. I think this means I can go back to making my Cheesy Potato soup now….

The recipe for this soup is really easy and doesn’t take any time at all to make. Give it a try! You won’t be disappointed.

Broccoli Cheese Soup

2 cups     fresh cut broccolibroccoli

1 cup      water

1 ¼ cup reserved juice, plus water if not enough juice left

1 cup      almond milk

1 tsp       chicken bouillon powder

¼ tsp     sea salt

1/8 tsp   pepper

2 tbsp    brown rice flour

1/3 cup   grated vegan cheddar cheese

Cook broccoli in water in covered saucepan until tender. Drain and reserve juice. Put broccoli in blender.

Add remaining 6 ingredients to blender. Process until smooth. Return to saucepan. Heat, stirring occasionally, until mixture boils and thickens. Makes 3 cups.

Serves 2-3

8095971047_2a93f46d0a_bMy name is Carmen and I have 3 beautiful children, 4 year old boy/ girl twins and an older son. I grew up on the East Coast and have a deep love for the ocean. I love the outdoors, travelling, exploring new places and to getting out there to enjoy and embrace life!

The kids keep me busy with the twins now in preschool and our decision to eat sugar and dairy free at our house. When not playing with or helping the kids, I am in the kitchen trying out or modifying recipes to meet our needs. I have even been dabbling in some gluten free recipes over the past year as well.

IMG_2646We made the decision to remove sugar, back when my Matthew, my oldest was in grade 2, due to behavorial and sleep challenges with him. It was amazing the difference it made! Shortly after we went dairy free as I discovered both myself and my daughter had an intolerance and the gluten well, when I discovered I was still feeling tired after eating a dairy free/ sugar free muffin, gluten was the only thing left!

I have always loved to write but started blogging because I felt that I could share more faster and reach a larger audience. I find that there are so many things to share and explore, as life is a story. Everywhere we go I am taking pictures and thinking about how I make this into an informative, yet interesting blog post for my readers. Everything from crafts and activities for kids, our adventures camping and in the outdoors, to the many sugar and dairy free recipes, I like to blog about it!

I also like to include tidbits about the importance of taking time for ourselves, gratitude and being ambassadors for our planet.

I like creating a community where we can share, interact and learn from each other. Plus it’s stretched me in the world of technology as well!

Butternut Squash Soup

IMG_2432A couple of weeks ago I was visiting my sister in Vancouver, having a little me time and also there to attend my friend Stuart’s 40th Surprise Birthday; she made this fabulous Butternut Squash soup. Now I have not been a huge fan of squash in the past but this soup was really yummy!

I had found that the texture of squash was not always to my liking, it felt kind of grainy on my teeth so I avoided squash in general. But lately I have been finding many recipes with squash that I and the kids have quite enjoyed. Like Spaghetti Squash with chicken and pears from Clean Eating Magazine, Acorn Squash with harvest rice stuffing and now this soup!

It is a dairy free, sugar free and gluten free soup, of which I think I had 3 bowls for dinner that night and then another 2 for lunch the next day!

I found the flavors delicious with coconut milk and cinnamon. The original recipe calls for 2 butternut squash but that day my sister used acorn and butternut squash and it was very tasty.

I was so excited about this soup when I returned home I went straight to the store to buy what I needed. Unfortunately, as life would have it, I did not make it until the other day as I could not get all the ingredients I needed, and then of course there was time and real life to get back to – you know 3 kids, running a household…

I made it with the 2 different squashes which I think just adds lovely flavor and served it to the twins for lunch. Both of them gobbled it up, asking for a second bowl, while I scarfed, I mean enjoyed, my own soup.

It is super easy to make as well and easily frozen if you don’t wish to eat it constantly for a week.

Butternut Squash Soup

2 medium butternut squash, or 1 butternut and 1 acorn

1 pink lady or royal gala appleIMG_2458

1 medium onion

1/4 c. Earth Balance vegan spread

900 ml chicken broth

1 c. coconut milk

1/2 tsp. dried sage

generous pinches of cinnamon and salt

1 tbsp. maple syrup (optional)

Chop and peel squash; cut in half and seed, then chop into small pieces. Chop onion and apple.

In a large saucepan over medium heat, melt Earth Balance, add onion and apple and saute until onion is soft. Add broth, squash, and coconut milk. Bring to boil and simmer for 20-25 minutes.

For the last 5 minutes add sage, cinnamon and salt. Squash should be very tender when done.

Use immersion hand blender in pot to blend until smooth or ladle soup into blender and whip on high until pureed. Pour back into pot and reheat if necessary. Serve.

You may add optional garnishes such as maple syrup drizzled on top, vegan sour cream, slivers of apple or dried sage.

Soup will keep well refrigerated for 5 days or in the freezer for up to 3 months.

Pumpkin Cheesecake – Absolutely to die for!

It’s coming… Thanksgiving and all things pumpkin! Big feasts, meals with friends and did I mention pumpkin? I love pumpkin and all things related to it, especially pumpkin pie. And Thanksgiving seems to be the only time of year that I make or get some.

Of course with any pie you can make any kind any time you want. But I seem to fall into the  times of the year when they are most prominent, as I imagine do many of us. So though I love pumpkin pie and it is my favorite, I do only get it once a year.

Every year at Thanksgiving I decide I am going to try a new pumpkin recipe, as my sister often makes things like pumpkin ice cream, pumpkin tarts and pumpkin cheesecake. And though I love to branch out and try new things I tend to fall back to my pie. What can I say? It seems just wrong to not have it.

This year I truly did branch out and I made a pumpkin cheesecake for the first time. Not specifically for Thanksgiving, because of course I will make pie, but around the right time 🙂 I found a recipe on Pinterest that looked really good and thought that I would try it.

Being dairy free I thought that I would just have to avoid cheesecake altogether. During the summer my friend decided to try a tofu chocolate cheesecake, which gave me hope. I thought that it would prove to be quite good. Not so much. Though not terrible we both agreed that we would not make it again. Then, I remembered that they make non dairy cream cheese and I had tried it before and liked it, so why not just substitute that into a regular cheesecake recipe? This got me very excited so I went to work.

After I got over just how much cream cheese this recipe called for; I went out got the ingredients and looked at what other substitutions I needed to make. The crust was a bit of a challenge as it called for graham wafers, but I came up with a solution using almond mash leftover from making almond milk, as I had done something similar making a pie before. I substituted coconut sugar for the sugar and then of course the non dairy cream cheese and sour cream (yes this recipe called for sour cream which was another reason why this particular cheesecake recipe intrigued me).

Now this recipe is not one that you can just whip up and have ready in an hour. In fact when I finally went to make it I looked at the recipe, and in reading it more closely almost aborted the whole idea. It was a lot of time, a number of steps and would not be fully ready until the next day (as when it was finished baking you had to let it sit in the fridge overnight).

Let me tell you it is totally worth it! This cheescake is absolutely fabulous, moist, creamy and flavourful. All the kids asked for a second piece and D’Wayne looked like he was in heaven. It was absolutely delicious! I think Matthew even licked his plate and then asked for a third piece of cheesecake (to which of course I said no).

So if you are a fan of cheesecake and even a remote fan of pumpkin this recipe is worth the time and effort put into it. And the nice thing is, dairy free, sugar free, gluten free all equals guilt free and will impress every one of your guests this Thanksgiving.

Or you could just go with plain old pie

Pumpkin Cheesecake

Crust:

12 tablespoons Earth Balance vegan spread

2 1/2 c. almond mash (leftover from making almond milk)

1/4 c. coconut sugar

dash of salt

Cheesecake:

4 – 8 oz. vegan cream cheese

1/4 c. vegan sour cream

2 1/2 c. coconut sugar

15 oz. canned pumpkin

6 eggs, lightly beaten

1 tbsp. vanilla

1 tsp. sea salt

2 1/2 tsp. cinnamon or 2 drops of Cinnamon Bark essential oil

1 tsp. ginger or 1 drop Ginger essential oil

1/4 tsp. cloves or 1 drop Clove Bud essential oil

Postion rack in center of oven. Preheat to 325 F.

Brush a 10 inch springform pan with 1 tbsp. of Earth Balance. In a bowl, stir the remaining Earth Balance in with almond mash, coconut sugar and a pinch of salt. Press mixture into bottom of pan and up the sides. Bake until golden brown about 15-20 minutes.

Cool on a rack, then wrap outside of pan in tin foil and place in a roasting pan.

In a large mixing bowl beat the cream cheese until smooth. Add coconut sugar and beat until just light. Add sour cream, then pumpkin, eggs, vanilla, 1 tsp. sea salt and spices and until just combined. Pour into cooled crust.

Gently place roasting pan into oven (do not pull the rack out). Pour boiling water into roaster until water is about half way up springform pan. Bake until the outside of cheesecake is set but the center is still loose, about 1 h 45 min. Turn off the oven and open the door briefly to let out some heat.

Close oven door and let cheesecake sit for 1 more hour. Carefully remove from roasting pan and let cool on rack. Run a knife around the edges, cover and refrigerate for at least 8 hours or overnight.

A Few Apple Muffins

Apple Cinnamon Muffins

For those of you who caught up with me last week, you’ll be pleased to know that I am still plugging away at using up the apples from my apple tree. Which is really good for you because I am finding and testing some great apple recipes which I then share. Plus my kids and D’Wayne are thoroughly enjoying being the taste testers, as are some of my neighbors.

Like I said there is a serious amount of baking at my house right now. There is not a day that goes by that I am not whipping up something in the kitchen and I am getting good at doing it quickly. Yesterday morning I whipped up some apple muffins between breakfast and heading out to my friends for coffee at 10 am.

Yesterday’s Apple Cinnamon muffin was a gluten, dairy and sugar free muffin, sweetened with maple syrup with coconut oil and flax seed meal. I am finding that I really like those recipes with that little extra kick of nutrition in there. You just mix it in and can’t even taste it.

I found this recipe on another blog site called the The Simple Veganista who shares raw and vegan recipes – who actually found it originally on the blog The Vanilla Bean. And I have to say these muffins are very good! In fact my oldest son Matthew’s response when he came home afterschool was “Damn these are good!” with his face all lit up with excitement.

They are super moist and very tasty. The only downside to this recipe is that one batch does not make enough – only 9 muffins! I did stretch it to 12 but got some very small muffins out of it.

Apple Cake Muffin

Last week I tried the Gluten Free Goddess’s Apple Cake muffin recipe, which we also enjoyed as this muffin has chunks of apple in it which I really liked. Many of the recipes I found called for grated apple and though this was good I wanted to really taste and notice the apple, so I liked the chunks. Her recipes still call for refined sugar so a quick substitution of coconut sugar and I was able to whip these babies up! It even called for powdered sugar sprinkled on top once they were done baking and I was able to substitute for this as well! See recipe below.

I love muffins that have a little sprinkle of something on top, and both these muffin recipes do -the first being a coconut sugar and cinnamon mixture. Yum! There is just something fun about sprinkling something on top 🙂

The only thing I find with the Gluten Free Goddess is many of her muffin recipes are the same base with slight changes in them to make them apple, blueberry or whatever kind of muffin it is. Though I do admire her, as all her recipes are original, tried and true; I like a little more variety in my muffins, which is why I search out other recipes to try. Regardless I do have to say even though her base is the same, I have never gone wrong with one of her recipes. They are always delicious!

Either way I would recommend either recipe if you are looking for a gluten free apple muffin, though the Apple Cinnamon one is the favorite at our house (I used coconut milk for our non-dairy milk, though you can use rice or almond milk if you prefer).

I still have a huge basket full of apples and am not sure what to do with them next as I am really looking for something that will use them up in large amounts! If you have any apple recipes to share please post them in the comments for everyone to try, especially me.

In the meantime go whip up one of these and then sit down for a few minutes and enjoy, savor, maybe grab a cup of coffee, while the kids play quietly….ha ha oh I’m dreaming again!

Sugar Free Powdered Sugar (replacement for regular icing sugar)

1 cup nonfat dry milk (for dairy free use powdered coconut milk)

1 cup cornstarch

2/3 cup Krisda Stevia for baking

Combine all the ingredients in a food processor or blender and whip until blended and powdered. Store in an airtight container.

This replacement can be used in any recipe calling for icing sugar.
