Easter Activities and Ideas

easter-bunny-2Well I have to admit that Easter has snuck up on me again! You would think that with calendars and the kids talking about Easter for the past month or more that I would have been more on top of it. But here we are the week before, actually only a few days away, and I have ‘clued in’ that maybe I should get ready for Easter.

We did dye eggs last weekend, which Luke and Chloe have been asking to do since the beginning of March, but that has been it so far. I always find there are so many cute and fun things to do around Easter and I have such great ideas! Then it comes and goes and we have done very little. And honestly the kids don’t notice really, but it is me who knows that we could do so much more!

easter activitiesThe things we typically do for Easter are an Easter Brunch on the Sunday, an Egg Hunt and search for Easter baskets. Prior to the day we usually color eggs and make a craft or two. We used to participate in some of the community Easter events, which usually include an egg hunt, but the challenge is now, the treat at the end contains ingredients that we do not eat, so I think it’s unfair to take the kids out and not let them have the prize. So we find other things to do.

We also now have a sugar free Easter, which is a little more costly, but pretty easy to do. The Easter Bunny brings socks and toys, chalk, bubbles, play doh and the like. The twins love it and don’t know any different because that is what it has always been for them. Matthew still struggles with the lack of candy in his basket but overall does ok as they are all getting the same. It is challenging though as the kids get older and hear and see what other kids get for Easter, or any other holiday for that matter. I guess that’s one of our many challenges as parents, making a decision for your family and hope for the best, trusting that you have made that decision for a good and sound reason – though the children, nor others, may not always agree with you.

easter activitiesThe bottom line is my kids still get to enjoy Easter and the many things that are part of it. The Easter Bunny still comes to see them, he’s just changed what he puts in the baskets and eggs. I have an Easter mold so I make some chocolates, so still get chocolate to enjoy and it’s better for us. Yes it takes a little more prep and effort but it’s worth it in the end.

Apple Cinnamon Pancakes

IMG_2805Yesterday many of us celebrated Pancake Tuesday. A tradition that began in the Middle Ages this day has grown and enjoyed by people around the world.

Enjoying pancakes for supper is one of my favorite things (in fact I love anything breakfast for supper, there are so many fabulous breakfast foods out there) but on Pancake Tuesday I like to spice it up a little and make a recipe that is more than just your regular plain pancake – though those are just as delicious!

There are so many kinds of pancakes to choose from. Some of our favorites are pumpkin and oatmeal banana. There are gluten free options, dairy free, coconut and fruit options. You name it, you can basically find it and make it.

Yesterday I decided to try out an apple cinnamon pancake recipe (at the suggestion of my mother who was here on the weekend). I didn’t have one so I quickly googled it and found a number of apple cinnamon recipes to choose from. My favorite was on dairygoodness.ca, where they suggested using maple syrup as the sweetener as well as a mix of flours.

Of course I had to make a couple of other quick substitutions to make it dairy free (as that is part of our diet as well) and went to work mixing up the dough. The most time consuming part was shredding the apples but otherwise is a quick and easy recipe to make.

It was a huge hit! Everyone loved them. They had just the right amount of apple, not overwhelming and with a little bit of syrup…Yum! They were fabulous. My modified dairy and sugar free version is below.

Apple Cinnamon Pancakes

1 1/2 c. all purpose flourIMG_2808

1 1/2 c. whole wheat flour

1 tbsp. baking powder

1 tsp. cinnamon

1/2 tsp. sea salt

3 eggs

2 1/2 c. almond milk

1/4 c. Earth Balance vegan spread, melted

2 tbsp. pure maple syrup

1 1/2 c. shredded apple

In a large bowl mix flours, baking powder, cinnamon and salt. In a separate bowl, mix eggs, almond milk, melted Earth Balance and maple syrup. Pour over dry ingredients and add apples. Stir gently until just combined – a few lumps may remain.

In a large non stick skillet, heat a small amount of butter. Scoop about 1/3 c. of batter per pancake into skillet. Cook approximately 2 minutes or until bubbles form in batter. Turn over and cook 1 to 2 minutes more until golden and fluffy. Repeat with remaining pancake batter.

 

The Art of Appreciation

IMG_2699Well Valentine’s Day is around the corner and even though it is one of my favorite holidays, it often tends to sneak up on me! Each year I find that February starts and then all of a sudden we are in the week before Valentine’s Day and I have not done much at all.

All of a sudden we have Valentine’s to buy for the kids classes, treats to make and some kind of plan to celebrate this fun loving day. See though I love the romance and having someone treat me royally on this special day, I also love to make it special for my kids. I believe that Valentine’s is not just for lovers but is a day to celebrate love in general and there are all kinds of love.

So I usually make a nicer dinner that night, I make heart shaped chocolates for treats that day. This year I made heart shaped cupcakes! as I found a heart shaped cupcake pan at Superstore. I also saw heart shaped ramekins but didn’t buy them when I saw them and missed out 🙁 They actually sold out within the week!

8095938392_66f01dc36d_bI also like to have the kids do a craft of some kind, yes it’s usually heart shaped, so today we did something really simple. We made heart shaped pockets. We cut out two hearts the same size decorated one and then glued the two together leaving the top open so we could put things in it. Then each day from now until Valentine’s we are going to put a nice note in everyone else’s heart. Something we like about them, enjoy doing with them, etc. I am also a believer in extending these holidays, why do they have to only be one day? Especially when there is such a nice message attached with Valentine’s in particular.

My intention is not only to do this this week but see if we can’t start something like this on a more regular basis, Valentine’s day or not. I think we often forget to tell people in our lives how much we appreciate them and mean to us. We shouldn’t just save it for birthdays, Valentine’s or other holidays. You never know how a kind comment or an act of love can make a difference in someone’s day.

So maybe after Valentine’s is over we’ll make new ‘pockets’ out of paper bags and continue the warm fuzzies, encouraging comments and notes of appreciation to each other. And I have a feeling it will not only make a big difference in our home but in our lives and the lives of others that we touch on a daily basis.

Valentine’s Pockets

Materials:

Red, pink, white and purple construction paperIMG_2696

pom poms (variety of colors)

Valentine stickers

Method:

Select color of construction paper that you desire. Fold paper in half. Trace a heart on one half of construction paper. Cut out heart through both halves  – you will end up with 2 hearts the same size. Young children may need help tracing and cutting the hearts, while older children can do this on their own.

Decorate one of the hearts with stickers, markers, pom poms, glitter glue, etc. Allow the child to create whatever decor they would like. Once they are finished decorating glue the two hearts together leaving the top open so that it creates an opening to put things in.

Allow glue to dry. Once dry hang hearts in a prominent spot where everyone can access them to put in their notes to each other.

New Year, New You

set new years intentionsIt’s that time of year again. The time of year when many people make New Year’s Resolutions. The sad thing is many of us do not keep them much past the first 2 weeks of the year.

I have written and read many an article on why this is, too much pressure, not being ready, or you don’t really want to do it but feel you have to join the crowds in this New Year’s Ritual.

I have not created New Year’s Resolutions for many years. But I do have a ritual that I do at this time of year to set New Years intentions and start out positively. Like many people I feel new year, time for new stuff to come into my life. Let’s leave the old stuff behind! I also feel inspired – but I don’t inundate myself with all these have to’s, resolutions or goals. I keep my ears and eyes open and participate in what calls to me. Whether it be some of the many online seminars at this time of year or decide on a task/ project of my own. For instance, right now I feel like I want information, I want to grow and expand spiritually. In fact I am craving it, so I am seeking it out avidly. And I am enjoying it. There is no specific goal or end result in mind, so no pressure. I’ll just do it until I feel satisfied and then I’ll move on.

I believe though that setting an intention for the year is a good thing, and I have done this through the ritual I mentioned above and am going to share with you here. I have done this for many years and find it to be quite effective and cleansing. It is a way of releasing and leaving the old stuff in the last year that you do not want anymore and entering the new year creating space for new things to come into your life, whatever they may be.

It is a fairly simple exercise that I do on New Year’s Eve. And this year I had the pleasure of sharing this experience with my loved ones, which I felt was a real treat.

Set Your New Year’s Intentions

On New Year’s Eve, take a piece of paper and write down all the things that you want to let go of, no longer serve you, release or wish to leave behind in the old year. Write them out by hand, do not type them out.

After you have completed your list burn the paper at midnight on New Year’s Eve, with the intention of releasing it all. Holding the intention is important. We did this outside at my parents firepit, placing our papers in one at a time and saying whatever came to mind as we did so. For example “I release these items and leave them in the old year”. It was lovely. Then we stood a few minutes in silence and when we were ready went back inside.

Then take a new piece of paper and write down all the things you want to create and manifest in 2017. Be specific and write out in as much detail as possible; using present statements such as I am, I have, etc. This is very important because if you simply say I want the Universe will say that’s great you want it and that may be about all you’ll get. It is also important to understand that your new list is not necessarily the opposite of what you left in 2016, as they may be quite different. They may be a springboard for setting your new intentions but it is important that they remain separate. You do not create your new list solely based on the old one. This will create a block in your manifestation.

Once you have completed your list just tuck it away and keep it somewhere where you can look at it later on. Yes, you are literally writing it down and then pretty much forgetting about it. There will be a time when you will go back to it but for now, leave it to rest. Of course you can leave the list and add to it over the next couple of days if you think of something you wish to add.

I felt a definite shift in my energy and outlook once we completed this. I felt lighter for one and had a more positive outlook on what was to come.set new years intentions

Though this is very effective on New Year’s Eve you can certainly do this on New Year’s Day or early in the New Year if you did not have the opportunity to on New Year’s Eve.

So in the next couple of days take a piece of paper and start writing! (The first full moon of the year is January 1 & 2nd and is a Super Moon, as well as another full moon on January 31 – which is another great time for releasing and a to do this activity)

Mushroom Turnovers

IMG_0799When I was in Junior High, a group of my girlfriends and I were into having dinner parties. We took turns hosting, dressed up and made a fancy meal complete with dessert for everyone. It was fun, each host making different meals, decorating the table, and trying new things.

On the evening that I hosted I, wanting to ensure everyone could enjoy what I was making, checked with the girls in regards to any allergies and/ or dislikes. Interestingly, they all came back with a resounding, “We don’t like mushrooms”. I clarified whether this was a dislike or an allergy and when they confirmed it was simply a dislike, I secretly smiled.

I had found this fabulous recipe for mushroom turnovers which I was dying to try and since they weren’t allergic to it… I made them and served them as the appetizer, saying nothing about what was in them. They LOVED them! No one noticing at all that it was mushrooms that they were eating. They thought it was ground beef.

After we were done the appetizer I then revealed to them that they had actually eaten mushrooms and no ground beef was present whatsoever. They were surprised (and thankfully not mad), and we went on to enjoy the rest of our meal and evening (which I have no idea what the rest of the meal was).

Needless to say, this recipe became a family classic in my  house. My Mum and sisters using it over the years for many events and parties. My Mum often has 4 dozen or more in the freezer at Christmas, ready to pull out and heat up whenever we want snacks or guests pop by. I have adopted the same philosophy and you’ll easily find turnovers (and other goodies) in my freezer this time of year.

The original recipe does contain dairy, calling for cream cheese and sour cream, but I have been able to adapt the recipe. Using vegan cream cheese and vegan sour cream they are still just as fabulous! (which having had the original I can fairly compare)

Mushroom Turnovers

9 oz. vegan cream cheese

1/2 c. Earth Balance vegan spread

1 1/2c. flour

In a medium bowl, cream vegan cream cheese and Earth Balance. Add the flour and work with fingers or a pastry blender until smooth. Chill well for at least 30 minutes.

Filling:

3 tbsp. Earth Balance vegan spread

1 large onion, finely choppedwpid-SourCream3-318x270

*1/2 lb. mushrooms, finely chopped

1/4 tsp. thyme

1/2 tsp. sea salt

pinch black pepper

2 tbsp. flour

1/4 c. vegan sour cream

In a skillet, melt the Earth Balance. Add onion and brown lightly. Then add mushrooms and cook, stirring often about 3 minutes.

Add the thyme, salt and pepper and sprinkle with flour. Stir in sour cream and cook until gently thickened.

Preheat the oven to 450F. Roll the pastry dough to 1/8″ thickness on a lightly floured surface. Using a biscuit cutter, cut into 3″ round circles.2585_enlarge

Place a teaspoon of mushroom filling on each circle and fold over so that the edges touch. Press the edges together using fingers and prick the tops to allow for steam to escape.

Place on an ungreased cookie sheet and bake until lightly browned, about 15 minutes.

*To finely chop mushrooms I use a food chopper from The Pampered Chef. This makes it quick and easy to get them to the right size.

Makes about 3 dozen

Oh the Weather Outside is Frightful…

For the past week in Calgary we have been experiencing the best winter weather has to offer. Snowstorms, blizzards, blustery winds and freezing cold. High snow drifts that take hours and a lot of brawn to shovel. We’ve experienced long commutes to work, traffic jams and slippery road conditions.IMG_2505

Yet in the midst of all this is Christmas. Shopping, festivities and all kinds of family fun activities to go and do. This past weekend especially there was lots of fun things going on and when I heard the weather forecast I was saddened by the things we would likely miss. Yet….

On Friday I decided to bundle the kids up and head out to see the reindeer at the Kingsland Farmers Market, it was only -23. And on Saturday when it was -30 C I decided to bundle them up again and take them out to Christmas at the Hive in Okotoks at the Chinook Honey Company. Then we came home and had lunch and quiet time, and then yes I was likely crazy or simply had brain freeze by this time, bundled up one more time and went to the CP Holiday Train arriving at Anderson station (by now it was only -18 C so really significantly warmer).

All in all it worked out well. We used buildings and indoor options when we could, mixing up being outside with being inside. It turned out the reindeer were outside but you could wait inside to go and see them. The honey farm you could go in and out of the store as well as the Discovery Center and the sun was out! Which I find can make all the difference.

By the time we got to the train which was all outside, we managed to stay for an hour and a half before it was just too cold and uncomfortable to stay any longer.

Now you might think I am a crazy person for taking my kids out when it was that cold. But when I was growing up I learned that weather is, and you can’t change it; so are you going to miss an opportunity and let the weather dictate what you do or are you going to get out there and enjoy it? Of course it is important to be smart and sometimes it is the right decision to choose not to go. In this case though it was doable and we were able to make it a comfortable and enjoyable experience for everyone.

IMG_2525We dressed warmly, layering from long underwear, wool sweaters and snow pants. We brought warm drinks and snacks to share. In fact to the train we even brought some soup in a thermos. I was surprised by how many people I heard around us saying “Oh they brought soup” and commenting on how good it smelled and how they would like some.

We also knew when to leave, we didn’t try to make the kids last a little longer or do just one more thing. When we started to see signs that the cold was making us unhappy we were thankful for our experience and headed for the car. Even though I would have loved to have stayed longer and listen to Sarah McLachlan.

Life is what you make it. Now we have pictures and memories and Luke already asking to go back to the Christmas Train. And when we got home we put on the fire, sat on the couch and cuddled, while enjoying snacks and hot apple cider. Everyone happy and chatting away about the evening.

Now I know for some it is really challenging to go out in certain types of weather and of course we all need to do what is best for us. But if you’re prepared and have the right attitude you don’t always have to choose to stay home.

PS Now on Sunday I was quite happy to stay home and not go anywhere….but I was glad we did all those things this weekend. I wouldn’t trade it for the world.

Sun Dried Tomato & Goat Cheese Bruschetta

I love appetizers! They are small bite size morsels full of flavour and delight! You can sample many different ones without feeling full, guilty or like you’re overindulging. And there are so many good, delectable recipes out there, I’m never at a loss for variety or a recipe to choose.

Mushroom Turnovers

Of course I have my favorites, like Mushroom Turnovers and good old fashioned meatballs in a sweet and sour sauce, but like with everything else in food I like to branch out and try new things. A couple of years ago I found this recipe in a magazine at the gym. It looked good so I copied the recipe and tried it. It was an instant hit with everyone! Matthew, my spouse and dinner guests. So much so that my dinner guests asked for the recipe.

I loved it too and made it often over the next few months, sharing it with different guests or enjoying it ourselves. Then I went for a while without making it, until recently when I hosted a wine and cheese with friends and decided to pull it out and dust it off.

Tragedy struck though when I realized I could not find the recipe! A little while back I was organizing recipes and putting them onto my computer. When I did, I would throw away the paper copy. I thought I had done this with this recipe but I hadn’t. What I had done was post it on my first blog which I could no longer access, and then thrown it away, thinking that I would be able to access it forever. I was wrong and completely saddened that I no longer had this recipe.

But you know what they say, nothing on the internet is ever lost if you know where or how to look. It took a bit of figuring and looking but I found it. I was overjoyed to have it once again. I quickly copied it onto my computer and now keep it safe and sound in my files.

cold-platter1It also inspired me to have appetizers at my Christmas party this year. I will make some of my own and asked guests to please bring one to share. It’s a great way to discover more great appetizers and share some of my favorites with friends.

Sun Dried Tomato & Goat Cheese Bruschetta

1/3 c. sun-dried tomatoes, coarsley sliced

1/3 c. roasted peppers (bottled), patted dry and coarsely diced

1/3 c. artichokes (canned or bottled in water)bruchetta 1

1 large garlic clove, finely minced

6 medium leaves fresh basil, thinly sliced

2 tsp. extra virgin olive oil

1/2 tsp. balsamic vinegar

Pinch ground pepper

12 thick, sturdy crackers or slices of whole wheat baguette

1/3 c. goat cheese

1/4 tsp. salt

In a medium bowl, gently fold together sun-dried tomatoes, roasted peppers, artichokes, garlic, basil, olive oil balsamic vinegar and ground pepper. Spread each cracker or baguette slice evenly with goat cheese. Top with vegetable mixture. Sprinkle bruschetta with grains of salt, if desired.

Makes 12 pieces

How many Christmas Carols do you know?

Christmas-Carols-Origin-and-History-1Happy December 1st! Ok it is the second but it is the official kick off of the holiday season!

I get very excited for December 1st as usually I work hard in November to get gifts bought, cards written and baking done so that the kids and I can enjoy all the festive holiday events that are in December. There seems to be a multitude of them from Christmas parties to community events around the city. We never seem to be able to hit them all, though we try!, but at best hit at least one new one (we’re going to the Christmas train this year for the first time!) as well as attending some of our favorites; such as Zoolights and Once Upon a Christmas at Heritage Park.

We also have a little tradition at our house called December 1st gifts, which is something my Dad started years ago, which is just a small inexpensive gift that is given to enjoy the festivities a little more. Like a holiday coffee, festive candles, or a Santa hat. OLYMPUS DIGITAL CAMERA

Also on December 1st we start a Christmas Carol Challenge at our house, which Matthew and I began 2 years ago. Starting December 1st we sing a different Christmas Carol each day until Christmas. The challenge is not sing the same song twice (and singing by a different artist same sone doesn’t count – ha ha); so though easy at first eventually requires some thought.

It’s fun though because we end up expanding our holiday song repetoire, looking up Christmas songs and learning the words. We even learn the words to some of the songs we think we know! Because as I am sure you can relate, there are some Christmas songs out there that are popular and well known but we only know the first verse.

So we print out the words for everybody and sing the song together and it’s lots of fun. We pick the same time each day to do it. The past couple of years being when we walked to the bus for school, but since Matthew walks on his own to school now, we have decided to do it at dinnertime. The twins love it too as they love singing and learning lots of songs lately.

Sweet Potato Pecan Pie

IMG_2489One of the many things I have always enjoyed about the holidays is all the treats and goodies that come with the season. Yummy cookies and squares, family favorites and traditions that I grew up with.

Slowly I have been adjusting these favorites, such as Chocolate Peanut Butter Cereal Squares, Candy Cane cookies and Isch Tartlets, to name a few, to a sugar and dairy free version for us to enjoy. But I love it when  I find a new recipe that I think fits the ‘holiday bill’, that requires no adjusting. This was the case with the Sweet Potato Pecan Pie which I found in Clean Eating magazine. The picture alone looked scrumptious so I knew I had to try it!

I have to admit I did make some adjustments to the original recipe, not because it was not fine as it was, but because I decided to make some different choices. For instance it called for olive oil in the crust and though I am sure it would have turned out fine, the thought of it made my stomach roll, so I used coconut oil instead.

The pie was a hit with everyone, all the kids loved it and my Mum, as she was visiting (though she loves sweet potatoes so it wasn’t a hard sell). Of course it is super good for you too!

Sweet Potato Pecan Pie

2 sweet potatoes, peeled and choppedIMG_2487

1 ¼ c. rolled oats

¾ c. pecan halves

1/3 c. almond flour

¾ c. coconut sugar

2 tbsp. plus 2 tsp. coconut oil

1 ½ tsp. pumpkin pie spice

1/8 tsp. plus ¼ tsp. sea salt

1 cup organic firm silken tofu

1 tsp. pure vanilla extract

½ c. unsweetened golden raisins

2 tbsp. pure maple syrup

Place potatoes in medium saucepan and add enough water to cover. Bring to boil and cook until potatoes are tender, 12-15 minutes. Drain potatoes and transfer to a food processor. Puree until smooth. Transfer to fridge and chill completely about 30 minutes.

Prepare crust by putting rolled oats and ¼ c. of pecans into food processor. Puree until in a fine powder. Add almond flour, ¼ c. coconut sugar, 2 tbsp. coconut oil, ½ tsp. pumpkin pie spice, 1/8 tsp. sea salt. Pulse until combined. Gently press mixture evenly into the bottom of a non stick 9 inch spring form pan. Place pan in oven and bake for 18-120 minutes or until crust is golden brown. Remove from oven and let crust cool completely.

Prepare filling by pureeing tofu, remaining ½ c. coconut sugar, vanilla, remaining 1 tsp. pumpkin pie spice and remaining ¼ tsp. salt until smooth.

Add chilled potato puree and pulse until just combined and smooth. Pour into cooled pie crust and smooth top with spatula. Bake for 40-45 minutes, until filling is just firm in the center, light golden on top and cracks begin to form in the center of the filling. Remove from oven and let cool completely, about 2 hours.

While pie cools, prepare pecan topping.  In a small saucepan on high, heat remaining ½ c. pecans, raisins, maple syrup, 2 tsp. coconut oil and 2 tbsp. water until simmering. Reduce heat to medium and simmer stirring frequently, for about 5 minutes, until no liquid remains in pan. Transfer mixture to bowl and let cool completely.

To serve run a sharp paring knife around the outside of pie to loosen from sides. Remove sides from spring form pan. Sprinkle pecan topping over top of pie and slice.

Serves 10

Spooky Halloween Appetizers – Bat Bites

halloween appetizersOne of the things that I have enjoyed about Halloween over the past few years is the unique fun recipes that I have discovered. Now when I say unique and fun I mean ways of taking healthy food and making it into something Halloween themed.

I know I could have been doing this years ago, but since eliminating sugar and going to a sugar free Halloween, my focus has shifted to seeking these things out. I wanted to take the focus off the sugar fest at Halloween and show the kids the other fun aspect of things, like the decorating, festivities and food.

As a result I have made things like Boo-nanas and Apple Bites, which are banana ghosts and ghoulish looking smiles with teeth. I have found veggie platters made into skeletons and this year Bat Bites!

Apple Bites

These I think are by far the most fun yet. They are made from goat cheese, cream cheese and pesto (of which I have all non dairy substitutions for) and they are not only easy to make but look super cool. These treats are likely more for the adult crowd as some kids may not like the tastes and texture of them.

The trick was when do I make them? Luckily I had planned a wine and cheese for my neighbors and friends very close to Halloween, so I was able to try them out. Of course they were a hit! People loved them, not only how they looked but how they tasted as well.

So if you’d like to get a little creative this Halloween with your eats definitely give these a try! And there are all kinds of ideas out there. Hop on the net and Google it to find a variety of ideas to fit every taste bud.

Bat Bites

4 oz. vegan cream cheese

8 oz. soft mild goat cheese

1/4 c. pesto

2 tbsp. coarsely ground pepper

2 tbsp.poppy seeds

8 pitted olives, sliced

32 triangular corn chips (I just used Tostitos and broke them into smaller triangles)

Mix together cream cheese, goat cheese and pesto. Chill for 40 minutes.

Shape mixture into 16 2 inch balls, about 1 heaping tsp. each. Mix pepper and poppy seeds together in a bowl. Roll balls in poppy seed mixture to cover. Press olives into ball for eyes and insert chips on either side for wings.
