8095971047_2a93f46d0a_bMy name is Carmen and I have 3 beautiful children, 4 year old boy/ girl twins and an older son. I grew up on the East Coast and have a deep love for the ocean. I love the outdoors, travelling, exploring new places and to getting out there to enjoy and embrace life!

The kids keep me busy with the twins now in preschool and our decision to eat sugar and dairy free at our house. When not playing with or helping the kids, I am in the kitchen trying out or modifying recipes to meet our needs. I have even been dabbling in some gluten free recipes over the past year as well.

IMG_2646We made the decision to remove sugar, back when my Matthew, my oldest was in grade 2, due to behavorial and sleep challenges with him. It was amazing the difference it made! Shortly after we went dairy free as I discovered both myself and my daughter had an intolerance and the gluten well, when I discovered I was still feeling tired after eating a dairy free/ sugar free muffin, gluten was the only thing left!

I have always loved to write but started blogging because I felt that I could share more faster and reach a larger audience. I find that there are so many things to share and explore, as life is a story. Everywhere we go I am taking pictures and thinking about how I make this into an informative, yet interesting blog post for my readers. Everything from crafts and activities for kids, our adventures camping and in the outdoors, to the many sugar and dairy free recipes, I like to blog about it!

I also like to include tidbits about the importance of taking time for ourselves, gratitude and being ambassadors for our planet.

I like creating a community where we can share, interact and learn from each other. Plus it’s stretched me in the world of technology as well!

Fabulous Baked Beans

IMG_2839Growing up I always loved a can of baked beans. They reminded me of sitting around the campfire and enjoying them usually with hot dogs. But when we changed our diet canned baked beans was another thing that had to go! 🙁 Usually made with brown sugar and molasses (molasses being the worst culprit; which is 50% sucrose and is actually a by product of making refined white sugar, with the added chemicals) I had to forgo baked beans for awhile.

In fact, I never thought that I could make my own. Funny enough I thought they come in a can so how could I? Yet one day we went for supper at my neighbors house and he had made them from scratch. Thinking nothing of it, a little while later my mother said she wanted to make baked beans for the camping trip that she and my father were taking my oldest son Matthew on. I then remembered that my neighbor had made them and kindly asked for his recipe.

eden-foods-barley-malt-24412By this time I knew enough about different natural substitutes to make the necessary changes in ingredients. Barley Malt is often substituted for molasses and we had found a ketchup, that was not only organic but sweetened with honey. It was perfect!

And of course I love using my slow cooker, putting something in in the morning and let it cook slowly all day, the sweet smells wafting through the house as it cooks. By the time they are ready to eat our mouths are watering in anticipation!

The recipe turned out beautifully and so delicious! I often make them myself when we go camping and just reheat when we get there. I even make them at home from time to time and they are always gobbled up! I have a friend who I introduced them to, who now says that he will never be able to go back to the canned ones. Which I guess is good and bad 🙂

True, this is not a recipe that you can whip up in 30 minutes, but it is totally worth the time it takes to make them. And really it only takes a little prep and preplanning.

IMG_2836Now the original recipe calls for only 1/3 pkg. of bacon but I use the whole thing. In fact I buy the cheapest and fattiest brand I can find, which is probably why mine are better than my Mum’s even though we are using the exact same recipe! (sorry Mum)

Baked Beans

2 cups red kidney beans (soaked overnight)

1 pkg. bacon

1 onion chopped

1/2 c. Honey Bunny Bodacious Ketchup

1/3 c. pure maple syrup

1/4 c. barley malt

1 tsp. dry mustard

Soak beans overnight in water. Use a large container and add in generous amounts of water as beans will soak up quite a bit of it. Cover with lid.

Boil gently soaked beans until soft. Put beans into crock pot. Mix the rest of the ingredients together in a bowl and pour over beans. Cover and put on low. Cook all day (for a minimum of 8 hours)

*if you prefer a sweeter recipe you can adjust maple syrup and barley malt to taste

Things are very busy at our house with the kids daily activities and the dietary choices we have made. We have gone sugar and dairy free at our house due to allergies and intolerances and though I have found the no dairy to be easy, going sugar free was honestly, a nightmare! Sugar is in everything! But it can be done and now I am very comfortable with making the right natural substitutions and believe that our overall health is better for it.

I started blogging because I love to write, share stories and help people. I find that there are so many things to share and explore, as life is a story. My oldest son said to me one day when we were out “Mom you like to take a lot of pictures.” I looked at him and smiled and said, “Matthew, everything is a blog post.” Which it is! Everywhere we go and everything we do can translate into a helpful blog piece for my audience. Whether it be our adventures at Heritage Parktraveling through BC or new sugar/ dairy free recipes that I have found, it is all a possible post to share.

I tend to write about parenting topics, how to take time for yourself, kids activities and crafts as well as recipes. It’s fun! I love it and I love to share with everyone what I know.

3 Easy Steps to Healthy and Nutritious Eating (The kids will LOVE it!)

Eating well is something that is on many of our minds at this time of year. After the overindulgence over the holidays of food and especially treats, many of us look to make changes in what we eat come January. Whether the goal is to lose weight, feel better or just have the entire family eating well balanced and nutritious meals, here are some quick and easy things you can do to make changes right away.

Veggie Cheese Tray

1.Have nutritious snacks on hand. I often find it is not our meals that get us but the snacks we have in between. I have found that my kids will eat what is put in front of them (I have even noticed this for myself as well). If there are veggies and dip out on the counter then that is what they will grab when they are hungry, but if there are cookies near by and accessible then they’ll go for those. So I have started putting together a veggie tray and setting that out afterschool. I like to include variety such as grape tomatoes, mushrooms and snow peas; include your kids faves and watch them disappear. I have some yummy dairy free dip recipes that are easy to make and great with vegetables. You can also do a fruit tray as well with this yummy healthy caramel dip.

2. Provide sugar free sweet treats. There are lots of great recipes out there for sweet treats that do not contain the refined sugars and use natural sugars instead. My kids love banana candy, which is easy to make ahead and have on hand. Or raw chocolate truffles and chocolate pudding (my mouth is watering already!) We all love our sweet treats, it’s in our nature. By providing healthy ones, we satisfy our cravings for something sweet and can feel good about it – not only for ourselves but for our kids to.

3. Plan the menu for the week. If you plan out ahead of time your meals (especially dinner) this will not only reduce your trips to the grocery store and save you money but it will reduce stress and the “I don’t know what to make for dinner so I will grab this quick easy (and often unhealthy) option” -whether it be the frozen dinner or the scrambled eggs.

Starting with these 3 easy steps to healthy eating will put you on the road to eating a healthier and more balanced diet.

Tip: I have found that it is easiest to start small and break things down into steps that you can achieve easily, one at a time. If you take on too much at once and try to radically change everything not only are we more likely to give up because we are so overwhelmed, but those changes probably won’t stick. Aim for easy, aim for success!


Chocolate Peanut Butter Cereal Squares

As promised I am sharing with you today the sugar and dairy free recipe for one of my all time favorite sweet treats. I have no idea where this recipe originally came from. It was one that my Mum made all the time when we were growing up and we all loved! It was very hard to have just one or two, as they were so good.

When we went sugar free at our house I thought that I would simply not make these anymore as they are so full of sugar and I had no idea what the possible substitutes could be. It seemed like a daunting task as many of the ingredients needed to be changed. But as I learned and adapted other recipes, discovering the various natural sugar substitutes out there I started to feel that I could easily adapt this recipe too. It might be a challenge and take a little time but I felt I could do it.

The first challenge was finding a brand of rice krispies and cornflakes that did not have any added sugar (because many cereals do). In my search I discovered Erewhon, a cereal company by Attune Foods that had both of the cereals I needed. Their brown rice krispies are sweetened with brown rice syrup, while their cornflakes have no added sugar at all.

Slowly slowly over the period of about a year I found what I was looking for and determined what alternatives could work in this recipe. And finally a few weeks ago I had everything I needed so I gave the new recipe a try. I am happy to report that they turned out great! and taste very similar to the original square. Taste tested by Matthew, he said that they did not taste different at all! And they must be good because he kept going to the fridge and scooping a few at a time.

Pleased with the results I shared the new recipe with my Mum and sisters – happy to have an alternative to our favorite treat. And today I am sharing the recipe with you. They are an easy no bake square and can be put together in less than 30 minutes. Make sure that you have your powdered sugar alternative ready and premixed as this can add to your time if you have to make this as well. The recipe for this is below.

My only tip is once they have set in the fridge, take them out and leave on the counter for a few minutes so they soften a little, this will make them easier to cut. I usually precut the whole pan and put them in a container in the freezer – the only downside is that they are too easy to grab and feast on! But great when you want to pull something out for company!

Chocolate Peanut Butter Cereal Squares

Bottom:

3/4 c. coconut nectar

1/2 c. coconut sugar

1 c. unsweetened peanut butter

1 1/2 c. crushed Erewhon Corn Flakes

1 c. Erewhon Brown Rice Krispies

Heat the coconut nectar and coconut sugar until coconut sugar melts. Add peanut butter. Mix well. Then add corn flakes and rice krispies. Mix together well and press into greased 9×13″ pan.

Filling:

2 tbsp. fat free Jell-o vanilla instant pudding (this is not an ideal replacement due to the asparthame in it, but it is sugar free – I am on the lookout for a better substitute for this)

Rice or almond milk (approx. 2 tbsp.)

1/4 c. melted Earth Balance vegan spread

2 1/2 c. powered sugar replacement

Beat together well. Pour over bottom.

Top:

4 squares unsweetened chocolate, melted

1/2 c. Earth Balance vegan spread

Melt chocolate and Earth Balance in a small pot on the stove over medium heat. Stir frequently to ensure that chocolate does not burn. Lower heat if necessary. Mix together. Once completely melted spread on top and refrigerate.

Sugar Free Powdered Sugar (replacement for regular icing sugar)

1 cup nonfat powdered milk (for dairy free use powdered coconut milk)

1 cup cornstarch

2/3 cup Krisda Stevia for baking

Combine all the ingredients in a food processor or blender and whip until blended and powdered. Store in an airtight container.

This replacement can be used in any recipe calling for icing sugar.

Yummy!

 

Natural Sugar Substitutes

It’s been over a year now since we have completely eliminated sugar from our home. We did so because our oldest son, Matthew required it. We found that the effects of sugar on his body were too extreme, leaving him moody, angry and disruptive and it was also affecting his sleep at night. He would go to bed at a reasonable time, and I know it was reasonable because I checked around with other parents and experts, and it would take him almost an hour or more to fall asleep at night. Now as an adult I find it very frustrating when I go to bed and it takes me a while to fall asleep. I can only imagine my son’s frustrations around this.

It was a huge learning curve discovering what I could use instead of sugar and products that did not contain it. Because as we began our journey we discovered very quickly that sugar is in almost everything.

The biggest challenge was finding yummy alternatives for Matthew that equated to what the other kids were having, and all the foods that he enjoyed and was used to, such as chocolate, cake, pies and muffins. With diligence I rolled up my sleeves and have been able to find replacements for all these things, as you have seen with some of the recipes on my blog in previous posts. It was just a matter of learning what the natural sugar substitutes were that he could have and how to easily substitute them in a recipe. Once I started looking I found that there were many to choose from and I had a lot of them already in my home.

Here is what I have learned/ discovered to be great substitutes for sugar in recipes. What you choose as the substitute will depend on your recipe as well as personal preference. Many of these natural sweeteners also have great health benefits as well, such as being rich in vitamins and minerals or aiding in the prevention of certain ailments and diseases.

Honey

Honey -choose a honey that is local to you. It has been shown that local honey provides immunity for you against environmental illnesses because the bees are local to your area. Honey has many other health benefits as well such as being a natural energy booster and remedy for many ailments. I use honey as a sugar substitute in crumble and muffins as well as in my bread recipes.

Agave nectar – simply the nectar from the agave plant. Make sure you get a good quality brand as some agaves are more processed with more additives. Ojio agave by Ulitmate Superfoods is a good quality one. When substituting agave for sugar use 3/4 to 1/2 the amount as agave is 25% sweeter than sugar. You also reduce your liquids in your recipe because the agave is a liquid itself, by 1/4 cup. Agave is great in anything but I use it mostly in cakes, muffins and pies.

Maple Syrup

Maple syrup – use 100% pure. If you are using the processed kind then it is not a natural sweetener and you might as well use sugar. This is great in icing, marinades and glazes.

Stevia – is a strong leaf powder that is very sweet, also found in a liquid form. It is considerably sweeter than sugar so you use 1 tsp. stevia to 1 cup of sugar when substituting. It also has many health benefits such as reduced blood pressure and aids in digestion. Stevia is great in cakes and muffins, but also for your coffee, tea, or to sweeten other drinks.

Coconut sugar -comes from the nectar of the flowers of a coconut tree, and is available in a granulated or liquid form. Rich in vitamins such as potassium, zinc and iron. Coconut sugar is great because it melts like brown sugar, so I find that this works well in crumbles, on oatmeal or things like apple cinnamons when you want to create a syrupy texture.

Date Sugar

Date sugar -is made from dried dates and adds a rich sweetness to recipes. It does not melt or dissolve in liquids. When using date sugar substitute 2/3 cup to 1 cup of the sugar, as it is sweeter than sugar. I use date sugar in some bread recipes, muffins, pancakes or waffles.

Yacon syrup -sweetener extracted from the roots of the yacon plant. Some of yacon’s health qualities are strengthening the immune system and calcium absorption. Use 3/4 cup of yacon to 1 cup of sugar.

Barley Malt – is a wonderful replacement for molasses and is made from sprouted or malted barley. I use this in some cookie recipes, and my homemade baked beans. Yum!

Coconut Nectar

Coconut nectar – naturally sweet, nutrient rich “sap” from coconut tree blossoms. High in amino acids, minerals and vitamin C. It can be used just like agave or maple syrup in recipes instead of sugar. I have only used it so far in cookies and they have turned out delicious!

Fruit is also a great natural sweetener, using apples (applesauce, make sure there is not sugar added) or bananas can add the sweetness you desire.

The best thing to do is experiment with these sweeteners, determine which ones work best in your recipes and which flavors you prefer. It can be fun to experiment in the kitchen as long as you are prepared to ‘let it go’ if one doesn’t turn out so well 🙂 Personally I have had success with my substitutions and if you follow these guidelines you’ll have no trouble whatsoever and soon it will become second nature, just like it is for me!
