Something to add to your Christmas Brunch Gingerbread Waffles

I don’t know about you but I get a lot of newsletters. I like to try new things, so if I come across something I try it out and before I know it I have been automatically signed up for their newsletter (though I realize the new anti-spam laws are meant to prevent this).

From time to time I go through and weed out the ones I don’t really read or pay attention to and unsubscribe. Others I scan periodically looking for those little gems and remember why I signed up for it in the first place; then keep it in my inbox. Those gems are what keep me hooked, keep me reading the newsletters and staying on.

The ones that keep me hooked the most are the ones with yummy recipes that I discover and want to try, something I may not have thought of or come across otherwise. These are my favorite discoveries, some delectable dish just waiting to grace my plate and win my approval.

IMG_4329I found one of those gems earlier this week, when scanning the most recent Sobeys flyer. Luke and Chloe were with me, sitting on my lap, when I discovered these gingerbread waffles. I love gingerbread and I love waffles, so I was sure gingerbread waffles would definitely be a fabulous combination and treat. I ooed and awed and quickly clicked on the link, spreading my excitement to Luke and Chloe, as we waited in anticipation to see what was on the ingredient list. Looked easy enough, so we planned to try them.

It was so cute this morning as we came downstairs to make them for breakfast. Luke and Chloe got their chairs and wanted to help make them. Luke kept chatting away about trying them and we’ll see if they turn out and it was ok if they didn’t. Quite interesting chatter for a 4 year old. They were definitely excited.

IMG_4330Making all the appropriate adjustments (dairy and sugar), these waffles turned out fabulously! Perfectly golden brown, fluffy, with a subtle (not overwhelming) taste of gingerbread, they are not only delicious but very filling! After only having 2 waffles I was quite full.

The kids loved them of course and were also quite happy with how they turned out. We even broke out the Christmas dishes to enjoy them! Now I have another fantastic waffle recipe to add to my repertoire of delectable waffles (plain, chocolate, orange) and new options for breakfasts and brunches, especially Christmas morning breakfast. Who wouldn’t love to have gingerbread for breakfast on Christmas?

I would like to try this recipe using coconut milk instead of almond milk (though really the almond milk version turned out very well), just to see what the difference is and if we like it even more. You never know til you try! So next time I make them we’ll give it a go.

In the meantime, enjoy these yummy dairy free, sugar free, gingerbread waffles, topped with pure maple syrup they are sure to be a hit this holiday season!

Gingerbread Waffles

1 1/4 c. whole wheat flourIMG_4334

1c. all purpose flour

2 tbsp. coconut sugar

1 1/2 tsp. baking powder

1 tsp. baking soda

1/4 tsp. sea salt

2 tsp. cinnamon or 2 drops Cinnamon Bark essential oil

2 tsp. ginger or 3 drops Ginger essential oil

1/4 tsp. nutmeg

1/4 tsp. ground cloves or a toothpick dip of Clove essential oil

1 1/2 c. almond milk

3 eggs

1/4 c. barley malt

1/4 c. Earth Balance vegan spread, melted

In a medium bowl, whisk together dry ingredients (flour, coconut sugar, baking soda, baking powder, salt and spices).

In a small bowl, whisk together almond milk, eggs, barley malt and melted Earth Balance. Add barley malt mixture to dry ingredients and stir until well combined.

Fill a greased waffle iron with approx. 1/2 cup (125 mL) of batter per waffle. Cook until golden and cooked through, about 3 min. per waffle. Repeat until all batter is used. Serve with Pure Maple Syrup and a dollop of coconut cream! **the coconut cream is delicious and really makes the spices in the waffles pop – highly recommend it!

Makes approximately 12 waffles

Sun Dried Tomato & Goat Cheese Bruschetta

I love appetizers! They are small bite size morsels full of flavour and delight! You can sample many different ones without feeling full, guilty or like you’re overindulging. And there are so many good, delectable recipes out there, I’m never at a loss for variety or a recipe to choose.

Mushroom Turnovers

Of course I have my favorites, like Mushroom Turnovers and good old fashioned meatballs in a sweet and sour sauce, but like with everything else in food I like to branch out and try new things. A couple of years ago I found this recipe in a magazine at the gym. It looked good so I copied the recipe and tried it. It was an instant hit with everyone! Matthew, my spouse and dinner guests. So much so that my dinner guests asked for the recipe.

I loved it too and made it often over the next few months, sharing it with different guests or enjoying it ourselves. Then I went for a while without making it, until recently when I hosted a wine and cheese with friends and decided to pull it out and dust it off.

Tragedy struck though when I realized I could not find the recipe! A little while back I was organizing recipes and putting them onto my computer. When I did, I would throw away the paper copy. I thought I had done this with this recipe but I hadn’t. What I had done was post it on my first blog which I could no longer access, and then thrown it away, thinking that I would be able to access it forever. I was wrong and completely saddened that I no longer had this recipe.

But you know what they say, nothing on the internet is ever lost if you know where or how to look. It took a bit of figuring and looking but I found it. I was overjoyed to have it once again. I quickly copied it onto my computer and now keep it safe and sound in my files.

cold-platter1It also inspired me to have appetizers at my Christmas party this year. I will make some of my own and asked guests to please bring one to share. It’s a great way to discover more great appetizers and share some of my favorites with friends.

Sun Dried Tomato & Goat Cheese Bruschetta

1/3 c. sun-dried tomatoes, coarsley sliced

1/3 c. roasted peppers (bottled), patted dry and coarsely diced

1/3 c. artichokes (canned or bottled in water)bruchetta 1

1 large garlic clove, finely minced

6 medium leaves fresh basil, thinly sliced

2 tsp. extra virgin olive oil

1/2 tsp. balsamic vinegar

Pinch ground pepper

12 thick, sturdy crackers or slices of whole wheat baguette

1/3 c. goat cheese

1/4 tsp. salt

In a medium bowl, gently fold together sun-dried tomatoes, roasted peppers, artichokes, garlic, basil, olive oil balsamic vinegar and ground pepper. Spread each cracker or baguette slice evenly with goat cheese. Top with vegetable mixture. Sprinkle bruschetta with grains of salt, if desired.

Makes 12 pieces

Sweet Potato Pecan Pie

IMG_2489One of the many things I have always enjoyed about the holidays is all the treats and goodies that come with the season. Yummy cookies and squares, family favorites and traditions that I grew up with.

Slowly I have been adjusting these favorites, such as Chocolate Peanut Butter Cereal Squares, Candy Cane cookies and Isch Tartlets, to name a few, to a sugar and dairy free version for us to enjoy. But I love it when  I find a new recipe that I think fits the ‘holiday bill’, that requires no adjusting. This was the case with the Sweet Potato Pecan Pie which I found in Clean Eating magazine. The picture alone looked scrumptious so I knew I had to try it!

I have to admit I did make some adjustments to the original recipe, not because it was not fine as it was, but because I decided to make some different choices. For instance it called for olive oil in the crust and though I am sure it would have turned out fine, the thought of it made my stomach roll, so I used coconut oil instead.

The pie was a hit with everyone, all the kids loved it and my Mum, as she was visiting (though she loves sweet potatoes so it wasn’t a hard sell). Of course it is super good for you too!

Sweet Potato Pecan Pie

2 sweet potatoes, peeled and choppedIMG_2487

1 ¼ c. rolled oats

¾ c. pecan halves

1/3 c. almond flour

¾ c. coconut sugar

2 tbsp. plus 2 tsp. coconut oil

1 ½ tsp. pumpkin pie spice

1/8 tsp. plus ¼ tsp. sea salt

1 cup organic firm silken tofu

1 tsp. pure vanilla extract

½ c. unsweetened golden raisins

2 tbsp. pure maple syrup

Place potatoes in medium saucepan and add enough water to cover. Bring to boil and cook until potatoes are tender, 12-15 minutes. Drain potatoes and transfer to a food processor. Puree until smooth. Transfer to fridge and chill completely about 30 minutes.

Prepare crust by putting rolled oats and ¼ c. of pecans into food processor. Puree until in a fine powder. Add almond flour, ¼ c. coconut sugar, 2 tbsp. coconut oil, ½ tsp. pumpkin pie spice, 1/8 tsp. sea salt. Pulse until combined. Gently press mixture evenly into the bottom of a non stick 9 inch spring form pan. Place pan in oven and bake for 18-120 minutes or until crust is golden brown. Remove from oven and let crust cool completely.

Prepare filling by pureeing tofu, remaining ½ c. coconut sugar, vanilla, remaining 1 tsp. pumpkin pie spice and remaining ¼ tsp. salt until smooth.

Add chilled potato puree and pulse until just combined and smooth. Pour into cooled pie crust and smooth top with spatula. Bake for 40-45 minutes, until filling is just firm in the center, light golden on top and cracks begin to form in the center of the filling. Remove from oven and let cool completely, about 2 hours.

While pie cools, prepare pecan topping.  In a small saucepan on high, heat remaining ½ c. pecans, raisins, maple syrup, 2 tsp. coconut oil and 2 tbsp. water until simmering. Reduce heat to medium and simmer stirring frequently, for about 5 minutes, until no liquid remains in pan. Transfer mixture to bowl and let cool completely.

To serve run a sharp paring knife around the outside of pie to loosen from sides. Remove sides from spring form pan. Sprinkle pecan topping over top of pie and slice.

Serves 10

Christmas Crafts for Kids

Over the past month the little ‘elves’ have been busy at our house making their Christmas crafts. Experimenting with googley eyes, glitter and cotton balls, they have created some wonderful wintery and Christmas crafts to add to the decor of our home.

Matthew’s Christmas Reindeer

Since Christmas is a holiday that most of us begin celebrating early in December (and for some even sooner in November -or the die hards right after Halloween :); it allows us lots of time to get ready and enjoy the season. Whether it be through games, activities, Christmas shopping and events or crafts, there is lots to do.

Luke and Chloe have really been enjoying making crafts this year and our nanny has created some wonderful crafts for them to make that use their developing skills and aid in their development of motor skills and creativity.

Chloe is very diligent and careful when she makes her crafts and though Luke is careful too, he tends to be a little ‘freer’ with his creations. One of the first crafts they made was a Santa Claus handprint, with googley eyes and sparkles that can be strung to hang on the tree as a Christmas ornament.

Another one was a snowman on a glittery snowy background complete with hat and scarf. They enjoyed them both and were very easy for them to do.

Trace child’s hand on red foam sheet and again on white foam sheet. Cut both pieces out (depending on the age of the child adult may need to cut out the handprints). Cut the white handprint in half and place on bottom half of red handprint to create beard. Cut out a white strip long enough to go across the top of the red hand between the thumb and the rest of the hand to make fur on hat. Cut out small circle for pom pom on hat and place at the end of the red thumb. Glue on googley eyes. Cut out small mouth out of red foam, Decorate with red and gold glitter glue. Put a string through the top of the red foam hand to  hang on tree.

Cut one sheet of black construction paper in half. Cut 3 circles, the same size out of the white construction paper. Cut a small square out of the green construction paper (for hat). Glue the white circles sitting one on top of the other to build snowman on one of the halves of black construction paper. Glue on googley eyes on top circle to make face, add orange triangle from construction paper for nose. Use glitter glue to draw mouth. Use pieces of ribbon to make scarf for snowman and for brim on hat. Glue on. Use silver glitter glue on background of snowman (on black construction paper) to create ‘snow’. Add child’s name, if desired on right hand side of snowman.

When we went to Heritage Park for their Once Upon a Christmas event they had some great crafts there too. Matthew made a clothespin reindeer and the twins each made a puppet out of an old Christmas card. This was a really simple idea where they traced a pattern onto an old Christmas card (they chose a bear), then we cut it out and glued it onto a popsicle stick. Not only is this a great use for old Christmas cards but Luke and Chloe loved it! They picked the card they wanted to use and after I helped with the cutting, they glued on the stick. Chloe got a little over zealous and decided to eat the glue, not sure why kids do that, I never did – but she finished her craft in the end.

Holiday Delights Sugar and Dairy Free Egg Nog

One of the many things I love about Christmas is the fun holiday drinks you can have. Things like hot apple cider, Christmas Jones, Angels Delight and my favorite Egg Nog. It is a rich creamy drink that you can have virgin style or add a dash of rum if you like. Either way it is delicious, especially if you sprinkle a little nutmeg or cinnamon on top.

Only available at Christmas, as soon as it came out in the stores I would buy it – sometimes as early as October – to enjoy and savour my first cup. Matthew also really likes egg nog and was asking me to buy some for him as soon as he saw it in the store. Unfortunately egg nog has the two things our family doesn’t consume anymore, dairy and sugar; therefore I was in a bit of a quandary. Some things I could live without, I did not want egg nog to be one of them! So I went on a hunt for one that would meet our needs. There had to be one out there.

There are quite a few non-dairy options out there, Vita-soy makes a Holly Nog from soy milk, as does Earth Balance, Silk and So-Delicious (coconut milk) as well as nogs with almond milk. I even discovered a rice milk egg nog made by Rice Dream. But though these are all great dairy free options they are still sweetened with evaporated cane sugar, which we can’t have; we needed one with a natural sweetener.

Since I couldn’t find one in the stores,  I came home and hopped online to see what recipes I could find on the internet. (I love the internet it has opened up a whole new world for me and I often wonder how we ever got along without it). My preference was an egg nog made with almond milk so that is what I looked for; and I found 3 really good recipes that I have made and we all tried.

The first one I found on Incredible Smoothies, a website founded by Tracy Russell who eats a high raw vegan diet. She has all kinds of great smoothie recipes on her site. The recipe for egg nog, I really liked as it does not contain eggs, (which I was concerned about for the twins as egg nog usually contains raw eggs), and it was all made in the blender, sweetened with frozen bananas! It was fast, easy, simple and delicious!

The second recipe I found on Healthful Pursuit by Leanne Vogel, who shares recipes, travel, food and life experiences on her site. This recipe for egg nog contains egg yolks as well as coconut milk, but is cooked on the stove. At first I thought that this would not turn out so well as I thought “Warm egg nog? Really?” but it turned out to also be delicious! And the fact that it was cooked on the stove eliminated my concern about the twins having raw eggs, so they could have it too. It was also really good warm. Leanne says you can let it cool and enjoy it, but I found due to the coconut milk, it congealed in little chunks when it cooled, and though not bad you had small pieces of coconut milk in your egg nog. I have leftovers in the fridge that I will be heating up for sure when I enjoy it.

The last one I recently discovered this week, is completely vegan and is the new front runner for our favorite. Courtesy of SPUD (I love these guys but that’s a whole other post), a local & organic grocery delivery service, this egg nog recipe is creamy, delicious and super easy – just add all the ingredients to your blend and mix. The kids enjoyed both recipes too. Matthew’s favorite was the one from Incredible Smoothies, I really liked the one from Healthful Pursuit (I found it a little bit creamer and lighter) and the twins, well they liked both and didn’t seem to favor one or the other (they are so easy to please those two 🙂

Dairy free egg nog with almond milk

The only downside with the stove top recipe is you end up with leftover egg whites and unless you have something to use them for they end up going to waste.

Either way we now have 3 delicious, dairy free, sugar free egg nog options, which even John tasted and said is “Way better than the store bought stuff.” And we can easily make them at home whenever we like, and as much as we like 🙂

So if you’re looking for a non dairy egg nog that you can make yourself or simply wish to try something new, these recipes are great (and they also happen to be gluten free as well). Raw Vegan Egg Nog with Almond Milk

1 1/4 c. plain almond milk (you can make your own almond milk, it’s super easy)

2 frozen bananas, peeled and sliced

1/4 tsp. nutmeg

1/4 tsp. cinnamon or 1 drop Cinnamon Bark essential oil

dash of clove or 1 toothpick dip* of Clove Bud essential oil

dash of sea salt

1 date (soaked for 10 minutes)

1/4 tsp. pure vanilla extract

Put all ingredients in a blender. Start on low speed and move up to high. Blend on high for 20-30 seconds until mixture is smooth. Serve with a sprinkle of cinnamon or nutmeg, if desired.

*a toothpick dip is used when you do not want a full drop of essential oil as it’s too much for the recipe. Simply dip a clean unused toothpick into the essential oil bottle and then dip the toothpick with essential oil into your mixture and swirl it around.

Almond Nog

4 egg yolks

2 1/4 c. unsweetened almond milk

1-400 ml can of coconut milk

1/4 c. coconut palm sugar

2 tsp. pure vanilla extract

1 tsp. ground nutmeg

1 tsp. cinnamon or 1 drop Cinnamon Bark essential oil

pinch all spice

Separate the eggs and place the egg yolks in a bowl. Set aside.

Combine the remaining ingredients in a medium saucepan on medium heat bringing mixture to a simmer. Once simmering reduce heat to low.

Slowly add 1/4 c. of the hot liquid to the egg yolks in a bowl, whisking continuously. Continue adding liquid to the egg yolks until you’ve added 1 cup, then transfer new mixture to saucepan. Turn heat back up to medium and simmer for 4 minutes, whisking continuously.

Remove from heat and serve immediately or put into a mason jar and refrigerate.

Sprinkle with a pinch of cinnamon or nutmeg, if desired.

How to make Raw Organic Chocolates

About 8 years ago I took a class at The Light Cellar, here in Calgary, on how to make Raw Organic Chocolate. No sugar, no dairy and all natural ingredients. I was thrilled to find this course as I had been looking for an alternative so that we could enjoy chocolates at Christmas, Easter (and whenever else we wanted some!) without the refined sugars.

I had taken a chocolate making class before, bought the kit, came home and never made chocolates again. This time was different. The difference was you actually make your chocolate from scratch, from natural ingredients and it is very easy (the other class you made your chocolates from premade chocolate bars or pieces that you melted and molded into your own chocolates. I found this process finicky and the pieces were presweetened; so you could not choose your own sweetener).

Chocolate actually comes from a cacao nut, which is made into various forms, such as cacao powder, paste, butter, etc. Making the chocolate is super simple, using four basic ingredients and only takes a few minutes. All you need is cacao powder or paste, cacao butter, some kind of sweetener (honey, agave nectar, pure maple syrup, etc.), and vanilla.

The first step is to melt the cacao butter in a bowl – use the double bowl method with the butter in the top bowl set over a bowl of boiling water (boil water put it into bowl and set on counter; then set your smaller bowl with cacao butter on top)- be very careful not to get any water into the top bowl as it will ruin your chocolate! Once the butter is melted add the vanilla bean and let it infuse (with a knife slice vanilla bean down the middle and scrape out the seeds with a spoon – put into cacao butter). Sift your cacao powder in another bowl and add to taste, then add sweetener of choice. Voila! you now have a nice chocolate sauce which you can leave as is, pour into a pan refrigerate or freeze, or use as a base and add other ingredients.

The instructor did not give us exact amounts of ingredients to make our chocolate. He would provide a starting point and then encouraged us to taste it; to make it how we wanted. He recommended we start with a 1:1 ratio, mix it and go from there. More cacao powder made it a darker, richer chocolate, more sweetener made it sweeter – adjusting it according to our palette and preferences, so we had to taste it as we went along! He also encouraged us to use natural sweeteners and ingredients. For instance, we were using vanilla beans for our vanilla -actually cutting them open and scrapping out the inside. He said we could use vanilla extract but encouraged us to use pure extract if we did, not artificial.

Cacao powder

He described using these pure ingredients as “upgrading” – making it more natural, tastier and better for you. He also told us how we can add other natural ingredients to our chocolates that not only taste good but are high in nutrients, minerals and vitamins,  making it a superfood. Ingredients like goji berries, nuts and seeds, coconut and algae and essential oils. Maca root powder, honey and mesquite powder. He even recommended in one recipe that we try a little cayenne. It was actually really good!

As for the cost, the ingredients to make your chocolate is quite reasonable. The instructor said that in the time it takes for us to go and buy chocolate at the store, we can make it at home faster with fresh ingredients for about $1.50 to $2 per 50 g – which is comparable to what you would pay at the store.

I also love the fact that I can add all these “superfood” ingredients to my chocolates so that chocolate really is good for me and the kids. So when they ask if they can have some chocolate, I can say “yes” without feeling guilty or worrying if they are having too much.

It’s also so much fun to make (I’ve already made 3 dozen caramel cups and orange ginger snowmen for Christmas) and easy to do with the kids. You can get different kinds of molds to make different shapes for your chocolates. Experiment and have fun!

Christmas Carol Challenge

Last year Matthew and I decided to see if we could sing a different Christmas Carol each day on our walk to the school bus. I was finding that instead of the morning walk being a pleasant and happy time I would use it to discuss issues and then the poor kid would often get on the bus upset or mad, and I didn’t feel so good myself.

So when December came I decided to make things more fun and told Matthew that each day we would choose a Christmas carol and sing it as we walked to the bus from December first until school was out, around the 20th. The challenge was that we could not repeat the same Christmas carol.

Jingle Bells

This may seem like an easy task but once we got past Jingle Bells, Joy to the World and Santa Claus is Coming to Town we had to start racking our brains for new tunes. Either that or we had to look up the words to the carols as we could only sing the first few lines.

It is amazing how many Christmas carols there are out there and how few we actually know. So it became a study, as we would look up a Christmas carol print out and learn the words for our trip the next morning. It turned out to be a lot of fun. We were both happy and smiling by the time we got to the bus stop and it was a great way to start the day. We were feeding our spirits and playing together. It was great for our relationship and ourselves. Singing is a great way to feed your spirit and open your heart, not only at Christmas time but year round! Now we know lots of Christmas carols with all the words, some new, some old.

Santa Claus is Coming to Town

It was so fun that when I recently told Matthew that we would do it again this year, his eyes lit up and he smiled. I think this year we will make more of a plan in advance, choosing our carols earlier and learning the words if we have to (as many mornings last year we were holding song sheets in our hands and trying to sing and walk at the same time. It was also tough to read the words as this time of year in Calgary it is still dark when we head for the bus).

Some of my favorites are All I Want for Christmas Are My Two Front Teeth, I Want a Hippopotamus for Christmas and Matthew’s –Do You Hear What I Hear. I am looking forward to seeing what we come up with this year and how many new carols we will learn.

I can save the “talks” for another time, a time when it is more appropriate to do so and he is not heading off somewhere after.

So here’s my challenge to you. I am inviting you to join us in our challenge. You may not have a walk to the bus each day with the kids but find a time, the same time each day, where you can sing a Christmas Carol, from December 1-24, a different one each day, and see what you can come up with. You’ll find that it is lots of fun, a great way to connect with the kids and get into the holiday spirit. You’ll also learn a lot too!

Then come back and post the songs that you sang in the comment section and share with everyone how much fun you’re having! I’m interested to hear about your experience and perhaps learn some new songs from you. I’ll post our songs as well and we’ll see how many different Christmas carols we can come up with.

I had the pleasure of participating last weekend in a fundraising event for The Salvation Army Agape Hospice. This was a weekend long event held at the Azuridge Hotel in Priddis, Alberta called Deck the Halls.

The weekend included a design competition, a moonlight gala and silent auction as well as a family day with sleigh rides, face painting and Santa Claus. It also included performances by Matt Dusk, singer, songwriter and producer of jazz-pop music.

I had the opportunity to be one of the vendors in the Christmas shop where people could come and buy gift items or participate in various causes. There were people there from Stars, Canadian Blood Services, Soapnducks, Pampered Chef, and Scentsy as well as myself from Your Inner Light, where I was offering Angel Readings and associated products such as oracle cards and books.

The day was a busy and festive one with the room decorated for Christmas with delightful themed Christmas trees and displays, a giant gingerbread house and people milling through taking a look at the fares. We also enjoyed a performance that day with Mr. Dusk and what a show that was! He is a young, lively and vibrant man who definitely loves what he does. He is playful and young at heart and had everybody tapping their feet or dancing.

The thing that I found interesting about the crowd was the feeling in the air. As an Angel Therapy Practitioner® I can pick up on the vibe in the air, the feelings of people and atmosphere. Though there was a festive theme, I noticed that there were a lot of people in the room who though smiling were feeling sad inside inside, a little lost, who were searching for something and ready for a change or a shift in their lives. There were people who were together yet you could sense that they were miles apart. And I knew I was there to help.

My belief is that this is all related to the global shift that we are experiencing now, as we approach December 21, our bodies are changing and transforming, adjusting to the next level of ascension. For some of us that means that we are changing at rapid rates, which is why many of us are experiencing severe mood swings, fatigue and restlessness in our lives. We are not always able to pinpoint what is making us feel this way or why, but we can feel it. We are all opening up to our intuition and on different levels of our spiritual journey. Yet while some of us are accepting or seeking out the guidance to help us through, others are not sure what to do with it all or don’t know where to go.

My best advice to everyone is to be gentle with yourself during this time of change and to seek support in whatever form works best for you, whether it be through workshops, books and learning or finding kindred spirits to discuss and support you through your process. Because it is a process and a change and we all need support and to be patient with ourselves. One of the things we know is change is constant, so we will never be where we are forever. So if we are feeling sad or searching, the good news is you will not be here forever, you will find your answer and the happiness you seek. I encourage people not to be afraid and to move forward fearlessly. Do things that comfort you and speak to your soul. Know that you are not alone, that we are all going through this transition and change to some degree and that we are doing it together.

This is a very exciting time to be on the planet and believe it or not we all chose to be here at this time! This means that our role is just as important as the next person’s and we all have a part to play in the creation of the next steps for our planet and our lives.

This is why I feel that it is important for me to get out there and be present in the world, sharing my knowledge and skills with those who need it. I believe that day I connected  and talked with those that needed it most. Though some of the other vendors felt that the crowd was small and that the day was a bit slow for business, I felt that it was extremely successful. I did exactly what I needed to do that day. I also believe that by simply being present my energy may have helped someone I did not directly connect with and that’s what makes this all worthwhile. To know that I made a difference, which is what I think many of us strive to do/ feel in our lives.

What is my point? Don’t give up, don’t shun an opportunity because it doesn’t look profitable. You never know what connections or stepping stones you have placed by participating or who you may help. I helped that day at the fundraiser and I am sure, set the foundation for something else to come, which though not clear to me yet, I know will become clear.

Remember that everything you do affects another and that your contribution to the world is always significant; and as you enter the holiday season know that not only are we celebrating Christmas this year, but the planet and the wonderful transition that we making together towards a brighter, better and more peaceful planet.

 

Getting Ready for Christmas

Over the past couple of weeks I have started to get ready for Christmas, decorating the house, baking, and creating Christmas lists. It is a great time of year as I start right after Halloween, breaking out the Christmas music and Christmas movies and start transforming the house.

I clean as I go, so the house gets a thorough clean, even if it is only once a year (ha ha! -seriously I do clean a little more often). But often this is the time when I get into some of those nooks and crannies that get missed in the regular cleaning. It gives the house such a nice fresh, warm, cozy feeling.

I always wonder why the house feels so nice around Christmas time, all decorated and warm, I can just sit there for hours and gaze at the lights or watch the fire. I don’t know if its the anticipation of the coming holiday and events, or if it is simply a cleaner, less cluttered house (as I put away a lot of the extra things that are around); or simply the feeling of love and acceptance that permeates the world at this time of year. I often wonder, as I am sure many of us do, why cannot we not experience this feeling throughout the whole year?

One of the things that is the most fun about Christmas is watching the kids reactions to things, especially the little ones. This year Luke and Chloe being almost 3, are very aware of what’s going on and are constantly expressing their excitement and delight in what’s going on. So each day when I put up something new, Luke and Chloe are there oohing and awing. Because for them it is like they are experiencing it for the first time. Even though they have had 2 Christmases already they don’t really remember or get what it was about.

And it makes it so fun for me to introduce something new and make it special. When I put up the garland in the living room, I made sure the lights were plugged in the next morning so that they could see it when they came downstairs. “Oh Mommy look lights!” they run to tell me in delight; and then we had to leave the lights on all day.

When I put up the snowman shower curtain in the bathroom they started jumping up and down and clapping “Oh look snowman! Penguins!” Then they wanted to touch it and look at it and hang out in the bathroom for awhile.

Chloe helped me one day take out some of the Christmas Party Lite candle holders I had. Her eyes lit up each time I brought out a new box and she delicately helped me open and unwrap them. She put snowflakes in the bathroom, and thoroughly examined the gingerbread house.

Both Luke and Chloe love the outdoor lights on everyone’s houses, especially the snowman across the street, that Luke diligently goes and checks on after supper each night. They love the nutcracker on top of the tv and talk about Santa Claus every day, not because he brings them presents but because they know and recognize him, but that he is a part of Christmas. Even when we are shopping in the store, Chloe is oohing and awing and pointing out the Christmas decorations.

It is going to be a wonderful Christmas this year as I continue to watch Luke and Chloe discover it. Everything is new, everything is exciting, a wonder and delight to look at and discover. Matthew enjoys and gets excited for Christmas as well but now that he is older it is for different reasons and some of the wonder and delight he experienced as a young child is not as present as it used to be. It makes me a little bit sad to realize this, not only for him, but for us adults as well. Why not experience the pure joy and delight of the season not only this year, but every year. What if we were to approach it as if it was our first Christmas, something to delight in and discover, share the joy and excitement? Imagine what Christmas would be like for all of us, experiencing the joy of a Christmas decoration, seeing things through the eyes of a child. What a magical, wonderful season it would be for us all, each and every year. If we allow ourselves to enjoy the little things, the joy in the lights and decorations, regardless of the amount of presents under the tree, our hearts will be full and the magic of the season will truly be upon us.

And why not apply this throughout the entire year? Find the joy and excitement in everything in our lives, big and small, especially small, because sometimes even the smallest things bring us the greatest joy. Many of us say that it would be nice if the feeling of Christmas lasted all year, well it can, we just need to be grateful and appreciate what we see and do each day. Because there is love and beauty in everything and if we approach each day like a 3 year old with the attitude of what delights am I going to discover today, jump up and down and clap our hands, ooh and awe, what a delightful existence and world we will have!

So this Christmas (and after that as well) as you prepare for the season, decorating and doing all the things you usually do, pretend you are like a young child experiencing it for the first time, seeing life through their eyes, where every day is a discovery, an adventure, a wonderment of looking around the corner to find out what’s new. You’ll discover very quickly what a wonderful space this is to be in and it will become easier and easier to do so. Like anything it may take practice as some of us adults can be pretty stubborn and set in our ways, but the results of this shift will make such a difference in our life and the world. How can you resist such a wonderful and easy solution? If we live from our hearts with love we can never go wrong, just like a child, watch the world of wonder unfold around us.

Mmmmm… Chocolate Brownies (and oh yes sugar free)

Usually at this time of year I start preparing for Christmas, decorating and transforming the house into that cozy little sanctuary that is filled with love and laughter, children screaming in delight, sharing meals and good conversation with friends and family.

It is also the time of year that we are bombarded with sweets and treats and many of us tend to overindulge (a little) because there are so many good things to choose from. I usually start baking about now too, getting the treats ready and putting them in the freezer ready to take out when I need them, when company arrives or if I’d like a little treat myself:)

The challenge over the last year has been making some of my favorite recipes, which are full of sugar, and finding the appropriate sugar substitutions still getting the same taste and result. One of the absolute favorites in our house has been Chocolate Peanut Butter Cereal squares, which after a year of figuring out how to adjust it, I perfected the recipe. It was quite challenging as there were a lot of required ingredients that I had to find sugar free replacements for, such as cereal. The recipe calls for both cornflakes and rice crispies which are sweetened with added sugar. But more on that recipe next week when I post it. (Yes I am going to make you wait for that one)

Today I am going to share with you a delicious and very easy brownie recipe. It is a recipe from my Grandma that I used to make all the time, but hadn’t yet figured out what the appropriate substitution for brown sugar was. I had tried date sugar, and though sweet enough does not melt, so does not work in a lot of recipes where you require the sugar to actually melt. My mother was the one who actually found and tried coconut sugar and said it was a great substitution for brown sugar.

I had heard of coconut sugar but for whatever reason had not picked it up and tried it myself. In the summer when my parents took Matthew camping, my Mom was on a mission to adapt a good old camping recipe that we make on the coals of the fire, called a Cinnamon Apple. Delicious, it’s a baked apple with raisins and cinnamon and the brown sugar creates this wonderful sweet syrupy delight. Mmmmm. Anyway, she had found the coconut sugar and tried it in the Cinnamon Apple and it turned out perfectly; because the coconut sugar was not only sweet enough, it melts just like brown sugar. In fact, when you look on the package of coconut sugar, it says right on the package that you can substitute it for brown sugar.

So I started using coconut sugar in more of my recipes and all the ones that I had been ‘waiting on’ a brown sugar substitute. My first trial was with the chocolate brownies. Not only did they turn out, I found them to be more delicious, lighter and fluffier than the original recipe. In fact they are so good that you don’t really need to put icing on top of them, they are delicious all by themselves.

If you would like to put icing on them I am including an easy chocolate icing recipe that will do the trick. So make, enjoy, eat and freeze (so that you don’t eat them all! though that does not always stop me as I Know they are in the freezer).

Chocolate Brownies

1 c. coconut sugar 

1/2 c. melted Earth Balance

1/2 c. flour

2 tbsp. cocoa

2 eggs, beaten

Mix dry ingredients. Add butter, then beaten eggs. Grease 9″ square pan, pour batter into pan and bake at 350 F for 30 minutes.

Chocolate Icing

1 cup cocoa powder

3/4 cup Earth Balance

1 tsp vanilla

1 cup 100% pure maple syrup

Process all ingredients in a food processor or blender until smooth and creamy.
